Week in Review 3/3/12


The weekend is here!  I don’t know why, but I am so ready for the weekend this week.  I work part time from home, so it isn’t like I have the normal stress of being out of the house at a job for 40+ hours a week.  But this week felt like it went on forever!  Anyway, no big plans this weekend.  Maybe do a Costco run, we will see what happens.  It is supposed to be great weather, in the 50’s and into the 60’s by next week.  Loving this mild CO winter this year! Update on our home purchase – had the home inspection this week and everything is moving forward!  We are getting excited!

Here is what I was up to this week:
Meyer Lemon Curd – my first time trying Meyer Lemons, and this curd was perfectly sweet and tangy
Cranberry Scones – Cream scones with dried cranberries.  Perfect with a little of the lemon curd
Chocolate Peanut Butter Oatmeal – A quick stove top oatmeal with peanut butter and chocolate.  Actually pretty healthy for you.
My Memories and a Giveaway – A great program to create your own scrapbook, cookbook, cards etc.  Enter to win your own
Avgolemono Soup – A Greek style chicken and rice soup with lots of lemon.  Only 269 calories per serving.

Here are a few things I bookmarked this week:
Sour Cream and Chive Muffins by A Little bit of Everything – These look like a great savory muffin to have with breakfast!
Chicken Enchilada Pasta by Pearls, Handcuffs & Happyhour – Love Mexican flavors, this looks like a great pasta for a weeknight!
Cosmic Brownies by What Megan’s Making – I used to love these as a kid, can’t wait to try the homemade version!
Snickerdoodle Bread by Lil’ Luna – We love all things cinnamon in this house, and quick bread is so good to have around.  Can’t wait to try this!
Nutella Scones by Lulu the Baker – No surprise why I bookmarked these!  I am just a tad bit Nutella obsessed!

  12. I hope you got to relax a bit this weekend. I have never been to Costco’s but BJ’s is a similar store and I always have a lot of fun just walking through the aisles and seeing the gigantic packages.
