Week in Review 4/29/12

What a busy week it was!  My baby turned 7!  It really is amazing how fast time goes.  My son decided against a party this year.  Instead we did a family day.  It included, go-karts, mini golf, arcade games, sports shopping and some yummy food.  I must say he really impressed me with his mini golf skills.  If he would just realize how light a golf ball is, he could be un-stopable.

Here is what I was up to this week:
French Toast Muffins – Muffins with maple syrup and a hint of cinnamon.  Portable French Toast!
Butterfinger Cookie Cups – Chocolate Chip Cookie cups with mini Butterfinger candies, and topped with a chocolate/peanut butter drizzle.
Today is a Special Day – My little guy’s special day.  A round-up of his favorite treats.
Peanut Butter Polka Dot Bars – Peanut Butter, Oats, Reese’s Pieces, and Chocolate…enough said.
Peanut Butter Protein Bars – Little balls of peanut butter and oats.  Gluten free, and only 61 calories
Chicken Tikka Masala – Holiday Recipe Club goes international!

Cheesy Hasselback Potatoes by Baked by Rachel – These are some over the top potatoes!
Seasame Beef Lettuce Wraps by Fake Ginger – Love lettuce wraps, and have lots of beef in my freezer.  These look delicious!
Low Fat Diner Style Biscuit by The Realistic Nutritionist – A low fat, but still flaky biscuit?  I am in heaven!
S’mores Snack Mix by Cookies and Cups – This is so cute, fun, and easy.  Kids will love it, can’t wait to make it!
Key Lime Pie Martini by My Life as a Mrs – Dang!!  That is a cocktail!
