I can not believe that school is almost out! I am not ready for summer! I in a constant state of rushing around trying to get everything done before I have my son home full time with me. This next week is the last full week of school! We leave as soon as he is done with school for a trip back to the Mid-West to see our family and friends. I am more than ready for a little vacation, but will be stressed out until it is time to leave!
Here is what I was up to this week:
Coca-Cola Barbeque Chicken – a tangy barbeque sauce on grilled chicken drumsticks
Homemade Pasta for Mother’s Day – My husband went above and beyond for Mother’s Day, and it ended with all of us working on homemade pasta for dinner!
Diet Coke Butterscotch Brownies – Low Fat Brownies made with Diet Coke, and butterscotch candy mixed in.
Apple Pie Smoothie – Tastes like apple pie for breakfast, with just 4 ingredients in this super healthy smoothie
Bacon Egg and Cheese Sandwich – a much healthier version of a classic breakfast sandwich, you will be amazed how it gets is flavor

Chocolate Applesauce Muffins by Butteryum – I love muffins, that is no surprise. This chocolate version that is lower in fat and calories is right up my alley!
Flourless Chocolate Chip Brownies by Tastefully Julie – These look rich and fudgy, this seriously makes me want to go out and buy black beans!
