Andes Mint Cake Mix Cookies – Combine 2 favorites, Andes Mint Cookies and Cake Mix Cookies into one and get these super easy, chocolate-y, and fudgy cookies!

You may know of the traditional Andes mint cookies that are often around at Christmas time.  They are a chocolate cookie, that you place a mint on when it comes out of the oven. As the chocolate melts, you can spread to make a glaze or frosting over the cookie.

Well cake mix cookies are one of my new favorites. I made them years ago, but forgot how good and easy they are.  You can use whatever flavor cake mix you want, and then use whatever mix-ins you like.  The possibilities are pretty much endless. Red Velvet M&M Cookies anyone?

What You’ll Need

  • Chocolate Cake Mix
  • Vegetable Oil
  • Eggs
  • Chocolate Chips
  • Andes Mint Candy

So for this version of Andes mint cookies, we are starting with a basic chocolate cake mix cookie.  Cookies from a cake mix are simple. You really can use any flavor cake mix you want to make cookies, and mix up the candy or mix-ins.

How To Make Andes Mint Cake Mix Cookies

  1. Start by breaking 24 of the Andes mints in half, and then stack 1 half on top of the other.  Chop the remaining mints into small pieces.
  2. In a large bowl mix together cake mix, vegetable oil, and eggs until well blended.  Mix in chocolate chips.
  3. Scoop balls of dough and shape around the stacked Andes Mint candy. Place on a lined baking sheet. 
  4. Bake for 9-11 minutes until the edges are set.  Remove from oven and let cool for 5 minutes before removing to a wire rack.
  5. Place the chopped mints onto the baked cookies.  Let them cool completely and the chocolate to set up before storing.

Recipe Tips

  • The easiest way to get the mint in the center is to break it in half. Then stack the 2 halves on top of each other.  This lets the cookies stay thick when they bake.
  • If you can find the Mint flavored “chocolate chips” you can use those in place of the Andes mints on top and the chocolate chips that are mixed in.
  • This recipe does NOT require you to chill the dough. But if you like to take that extra step, just place the cookie balls in the fridge while you preheat the oven. Then they should be good to start baking.
  • Store cookies in an airtight container for 3-4 days, and they should still remain soft and delicious.

These cookies are over the top amazing when they are warm. The gooey chocolate, melty mint, and the warm cookie can’t be beat.  But don’t worry, they got rave reviews and are still incredible when they are cool.

  • 1 (15.25 oz) box devil's food cake mix (just the dry mix)
  • 1/3 cup vegetable oil
  • 2 whole large eggs
  • 1/3 cup semi-sweet chocolate chips
  • 40 Andes mint candies

Instructions

  1. Preheat oven to 350º F.
  2. Break 24 of the Andes mints in half. Stack 1 half on top of the other.  Chop the remaining mints into small pieces.

I made mine with also putting white chocolate chips in the mixture turned out amazing and yummy!! My kids and husband loved them with mint also and everyone at my work
