Bourbon Peach Limeade - a great use for those fresh peaches

 

I can not believe that it is August already.  My 9 year old and I are visiting family in Wisconsin this week.  We spent the weekend with my extended family in Minnesota.  It was a great time catching up with everyone, and we had great weather.  On Saturday night all of the adults went on a dinner boat cruise.  So nice to enjoy the sunset, the company, the good food, and all kid free 🙂  Yesterday we came to Wisconsin, and I got to hang out with Erin (Law Student’s Wife).  Dinner and drinks on the patio in downtown Madison, were the perfect way to end the weekend!

Bourbon Peach Limeade {Dinners, Dishes, and Desserts}

Now that August is here, peaches are all over the place.  Nothing beats a juicy fresh peach!  So I decided to take a few of those fresh peaches and turn them into a summer cocktail.  I have to say that I am new to bourbon, so I was a little unsure what to expect here.  But the bourbon adds just a little heat and almost a little spice to the background of this peach limeade.  I used Bulleit bourbon, thanks to the recommendation from Cassie.  Good thing I did my research ahead of time, or I would have been completely lost when I went to the liquor store.

For my 9 year old, I gave him just the peach limeade mixture without the bourbon, and he loved it!  He isn’t a big juice kid, but he drank this so fast, and wanted more.  This bourbon peach limeade will definitely be happening again with more fresh peaches.  Thinking I might even make it this week for my peach and whiskey loving father in-law.  A trick to not letting your ice water it down.  Freeze diced peaches and lime slices to use as your ice cubes!  Quick, easy, and doesn’t take away any of the flavor.

Fresh summer peaches with lime juice and bourbon make for a great summer cocktail

Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes

Ingredients

  • 2 large peaches, , peeled and diced
  • 2 cups water
  • 1/2 cup sugar
  • 3/4 cup fresh lime juice
  • 3/4 cup bourbon

Instructions

  1. In a small saucepan mix together water, sugar, and peaches. Bring to a boil. Reduce heat and simmer for 10 minutes, stirring occasionally. Remove from heat. Pour into a bowl, and refrigerate until cool.
  2. Once peach mixture is cool, blend until smooth. Add bourbon and lime juice.
  3. Serve over ice
