Meatball Subs – Easy Italian Meatballs Sub Sandwiches with homemade (or frozen) meatballs, with 2 kinds of cheese and toasted in a hoagie roll. Simple, delicious and a great dinner.
I am not sure where I first had a meatball sandwich. I do remember when my husband and I first got married it was something we made relatively often for dinner. I don’t remember if he brought it to the marriage or if we saw a recipe for it or how it came to be. But it has been a staple in our house for almost 20 years. And at this point, I don’t see it going anywhere.
The thing that makes these sandwiches so great for busy weeknights is you can use homemade or frozen meatballs. You can even make batches of homemade meatballs and have them in the freezer to use in this recipe. It really is versatile for what you have and what your family likes. You can even use ground turkey or chicken for the meatballs to lighten it up.
I do like to take a shortcut and use store bought marinara sauce for this, because it is thick and works well with the sandwich to not make it soggy. But if you have a favorite homemade version, you are more than welcome to break it out here.
What Toppings Do You Put On A Meatball Sub
I like to go classic with just cheese, but you could really add whatever you liked to the sandwich. Topping with a little extra sauce or serving it on the side is a great addition too!

What Cheese Goes Best On A Meatball Sub
I like to put sliced provolone on the bun before you layer the meatballs and sauce. Then top with Mozzarella cheese and maybe a little Parmesan cheese before baking to get all the cheese nice and melty!
What Bread Is Best for Meatball Subs
Really any long submarine type roll will work. In most bakery sections of the grocery store you can find a French Roll or Italian Roll, Brat Buns, or even something labeled at a Hoagie Roll. Any of these will work great. Just pick something large enough you can fit a few meatballs on it and that it is sturdy enough to hold up to the sauce.
How to Make Meatball Subs
- Meatballs – if you are making homemade meatballs mix all of the ingredients together and then roll into balls. Bake for about 15 minutes until they are cooked. Then add to a saucepan with marinara sauce and heat until warm. If using frozen add them to a pan of marinara sauce and heat until they are warmed through.
- Sandwiches – Start by placing slices of provolone cheese on the bottom of each bun. Spoon over the warm meatballs and sauce. How many you use will depend on the size of your buns. Usually 4-6 meatballs is what you will use. Top the meatballs with shredded Mozzarella cheese.
- Bake – Place the sandwiches on a baking try and toast until the cheese is melted and the buns are toasted. You can serve with additional marinara sauce on the side for dipping.
This meatball sub recipe is great to adjust up or down based on how many people you are serving. You can even put on slider buns to make them as an appetizer for a party. They are easy to make ahead and have everything ready, then you just have to assemble and bake when it is time to serve. You don’t want to assemble them ahead of time or the bun will just get soggy and soak up the sauce.

- 2 cups marinara sauce
- 1/2 cup shredded Mozzarella cheese
- 4 slices Provolone cheese
- 4 Sub buns
- 1 pound lean ground beef
- 1 egg
- 1/4 cup grated Parmesan cheese
- 1/4 cup Italian breadcrumbs
- 1/4 cup onion, grated
- 4 cloves garlic, minced
- 2 Tbsp chopped parsley
- 1 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- Preheat oven to 400F.
- In a bowl combine all of the ingredients for the meatballs. Shape into golf ball size meatballs. Place on a baking tray and cook for 15 minutes, or until cooked through.
- In a saucepan, over medium-low heat, heat the marinara sauce.
- Once the meatballs are cooked, add them to the sauce, stirring to coat. Simmer until everything is heated through.
- Place a slice of cheese inside each bun. Spoon in a few meatballs and sauce. Top with Mozzarella cheese. Put each sandwich on a baking sheet and heat in the oven for 5-10 minutes until the cheese is melty and the bun is toasted.
- Serve immediately.
Can use approximately 16 frozen meatballs instead of homemade in this recipe.
