Chocolate Chip Blondies

Chocolate Chip Blondies – soft and chewy blondies that come together in no time. They are buttery, rich, chocolate-y and delicious!

Blondies are probably one of my favorite go-to desserts because they are so darn easy and everyone loves them. They are soft, buttery, and you can mix in almost anything in want. Butterscotch Blondies, Coconut Blondies, Cinnamon Blondies…..so many possibilities!

Why This Recipe Works!

  • So Easy! Seriously, it is just 6 (7 if you include salt) ingredients. And everything comes together with just a bowl and spatula. No mixer required.
  • Just the right amount of chocolate. My husband isn’t a huge fan of chocolate and this is just enough to make me happy and he still enjoys them as well.
  • Mix up the chips! Want to use something other than chocolate, use peanut butter chips, dark chocolate chips, pecans….whatever you like!
  • Fast! This recipe comes together in about 5 minutes, and then bakes in about 25 minutes. So in just 30 minutes you can have a complete dessert that may disappear just as quickly.

What Are Blondies

Let’s start with the basics and get this out of the way first.

Blondies are a bar dessert that are similar to brownies, but they are more buttery and brown sugar base than the traditional chocolate base of a brownie. And just like brownies there are a million ways to mix them up and make them your own with different mix-ins or toppings.

What You’ll Need

  • Butter
  • Brown Sugar
  • Eggs
  • Vanilla Extract
  • All-Purpose Flour
  • Salt
  • Chocolate Chips

You will notice that I added an extra egg yolk to the batter, compared to your traditional blondie recipe. This makes them soft, chewy and just gives them great texture. Trust me, mix it in, it is amazing what just an extra yolk can do to the recipe.

How To Make Chocolate Chip Blondies

  1. Whisk together melted butter and brown sugar until it is light in color and very smooth. I like to use a small whisk for this and mix for 1-2 minutes to really mix them together.
  2. Beat in whole egg, egg yolk and vanilla until completely incorporated. Once you add in the flour you don’t want to mix the batter very much, so make sure everything is well blended at this point.
  3. Mix in flour and salt until it is just incorporated, be careful not to over mix. Overmixing can make your bars not nearly as soft and chewy.
  4. Fold in chocolate chips, reserving about 1/4 cup to sprinkle on top.
  5. Pour batter to the prepared pan,. sprinkle remaining chocolate chips evenly over the top. This is really just for looks, so if you want to mix them all in that is fine. They just tend bake into the batter, so I like to add a few to the top so you can really see them after it is baked.
  6. Bake for 25-30 minutes until the sides are set and golden and the top is dry. They may look slightly under done, but will continue to cook after you remove them from the oven.
  7. Remove from the oven and allow to cool before serving.

Storage

These will last covered for 4-5 days sitting at room temperature. Just like almost any dessert you can absolutely freeze them! I like to slice them first so they are easier to just remove 1 or 2. Let them thaw on the counter before serving.

Recipe Tips

  • Use the best quality ingredients. There are really just a few ingredients in this recipe, so the taste really comes through. This is when you want to make sure to use pure vanilla extract, not imitation. Use a high quality chocolate and a good quality butter for the best tasting bars.
  • Don’t over mix. I give this tip with a lot of recipes, but it is important. You want to really mix everything well BEFORE you add the flour. Once you start stirring in the flour, be gently and don’t mix too much. This develops the glutens in the flour and makes things tough. So as soon as you see the white streaks disappear, stop!
  • Do not over bake. The most common mistakes when baking is cooking something for too long. If when you take it out of the oven it is completely done, that is too long. The pan is super hot and will take awhile to cool, so this means whatever is in the pan will continue to cook as well. So you want to take your blondies out of the oven just before they are done. The sides will be set and golden, the top will appear dry and completely set, but not very browned. If you insert a toothpick it will have some crumbs on it, but not liquid batter.

Ingredients

  • 1/2 cup butter, melted
  • 1 cup brown sugar
  • 1 whole large egg
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 325º F. Grease an 8 inch pan or line with parchment paper. Set aside.
  2. Whisk together melted butter and brown sugar until it is light in color and very smooth.
  3. Beat in whole egg, egg yolk and vanilla until completely incorporated
  4. Mix in flour and salt until it is just incorporated, be careful not to over mix.
  5. Fold in chocolate chips, reserving about 1/4 cup to sprinkle on top.
  6. Pour batter to the prepared pan,. sprinkle remaining chocolate chips evenly over the top.
  7. Bake for 25-30 minutes until the sides are set and golden and the top is dry. They may look slightly under done, but will continue to cook after you remove them from the oven.
  8. Remove from the oven and allow to cool before serving.
