So last week I showed you my version of Cookie Dough Baked Oatmeal. I tried Oatmeal again, but this time I tried a chocolate version. I was a little more impatient this time, I didn’t want to wait for it to bake, so I followed the directions on the back of the container for a quicker stove top version. Seriously, if you like oatmeal, and peanut butter and chocolate together, you will love this. Being that I am not a fan of oatmeal in general, I need to keep trying. It was good, and I ate the whole thing, just not something I would go back to each day. But you have to remember, before last week I had never made my way through an entire bowl of oatmeal before! So I am making progress 🙂
What do you guys eat for breakfast? I am picky, so eating a well balanced healthy breakfast is tough. I don’t like eggs, so omlets and egg bakes are out. Any other good ideas? I usually resort to an English Muffin with peanut butter or Nutella. Sometimes I switch it up with Cheerios or just peanut butter toast, but I need some new ideas!
- 1/2 cup Oats
- 1 cup Liquid, (I used half water, half skim milk)
- Pinch of Salt
- 1 Tbls Cocoa Powder
- 1 1/2 Tbls Peanut Butter
- 2 Tbls Splenda
- Chocolate Chips, , optional
- Heat liquid in a sauce pan over medium heat. Once simmering, add oats and salt, cook for 5 to 7 minutes.
- Remove from heat, stir in remaining ingredients until well combined.
- Top with a few chocolate chips and enjoy.
