We had a very busy weekend here. Saturday morning my husband and son woke up early to see the Eclipse. Then my son had his first playdate in Colorado! I am so happy that he is making friends and adjusting quickly. Saturday afternoon we went to a snow/ice sculpture event that ended in a parade. It is amazing what people can do with snow and ice! And it is always fun to see a parade, especially when Santa is in it! Sunday we went up into the mountains and went snowshoeing. It was the perfect weather to be playing outside in the snow. I hope these warmer temps stick around for awhile!
I saw these Cinnamon Blondies over at From Cupcakes to Caviar a few months ago. They looked so gooey and delicious! My 6 year old is a huge cinnamon fan, so I had to make them for him. I over baked mine by a minute or two, but they were still amazing. This was my first experience with Cinnamon Chips, and I think I am going to have to go pick up another bag!
Cinnamon Blondies
Cinnamon Blondies - butter blondies with cinnamon chips and topped with a cinnamon glaze.
Ingredients
- 1 cup butter
- 1 cup brown sugar
- 1 cup sugar
- 2 eggs
- 2 1/2 tsp vanilla
- 2 2/3 cup flour
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 package cinnamon chips
- 1/3 cup powdered sugar
- 1/2 tsp cinnamon
- 3 Tbls milk
Instructions
- Preheat oven to 350 degrees. Line 13x9 pan with foil. Spray with nonstick spray.
- Beat the butter and sugars together until well blended. Add eggs and vanilla. Beat thoroughly
- Mix the flour, baking powder , 1 tsp cinnamon and salt together. Add to butter mixtures. Mix until just combined. Fold in cinnamon chips. Spread batter into the pan.
- Bake for about 25 minutes, or until a toothpick comes out clean. Let the bars cool completely before cutting into them. When ready to serve, combine powdered sugar, 1/2 tsp cinnamon, and milk until the right consistency to drizzle. The amount of milk may vary. Drizzle glaze over bars. Serve.

I swear I could add cinnamon to anything. I love working with cinnamon chips. They add cinnamon flavor, plus they are sweet so they only add to desserts that are already wonderful. Your bars look delicious! They could be for breakfast right?
