So now that we are after Labor Day, I think all the kids are officially back to school. We have been in school for 2 weeks now, and I can finally say I think we are getting back into a routine. I love summer, and am not ready for cold temperatures or that white stuff, but I am happy to have our routine back. My 9 year old is happy to be back in school too. He may miss his free time, and getting to play all the time. But he loves to go to school, and see his friends, and have structure. So this time of year is great for everyone!
I love to have homemade snacks ready for my son when he gets home from school. He always thinks it a special treat to come home and have something new to try. Walnut Chocolate Chip Protein Bars are one of his favorite, and he also loves these granola bars. This time, I decided to take one of his favorite cereals, and turn it into a chewy, no bake granola bar. These take those chewy store bought granola bars to a whole new level, and only 10 minutes worth of work! Great for after school, on the go snacks, or even lunch box treats!
Do you collect Box Tops? I started collecting them when my son started kindergarten. Each box top that you collect is worth $.10 for the school. It isn’t much, but when you look at all the products that have box tops on them, it can really add up! My son’s school raised over $1,500 last year from box tops. My mom collects them at her house in Wisconsin, and she comes with a small bag of them every time she visits. It only takes a few seconds to cut the top off the box, so it is such an easy to raise money for your school. Right now, General Mills is offering double box tops on a few select cereals; Cheerios, Multigrain Cheerios, Wheeaties, Cinnamon Toast Crunch, Trix, Cocoa Puffs, and Cookie Crisp. So go stock up on your favorites, make these granola bars, and collect extra box tops for your child’s school (or your grandchild, your niece or nephew, your neighbor, or anyone other child you know).

Cinnamon Toast Crunch Granola Bars
Chewy no bake granola with a touch of cinnamon and chocolate chips.
Ingredients
- 1/3 cup butter
- 1/3 cup honey
- 1/2 cup brown sugar
- 3 cups quick cooking oats
- 1 tsp cinnamon
- 1 cup toasted rice cereal
- 1 cup Cinnamon Toasted Crunch Cereal, , crushed
- 1/2 tsp vanilla
Topping
- 1/4 cup mini chocolate chips
- 1/2 cup Cinnamon Toast Crunch Cereal, , crushed
Instructions
- Stir oats, Cinnamon Toast Crunch, rice cereal together and cinnamon. Set aside.
- Over medium heat, melt butter, honey and brown sugar together. Once it starts to bubble, reduce heat, and cook for 2 minutes. Stir in vanilla.
- Pour syrup over the oat mixture. Stir until well coated. Pat into a greased sheet pan. Thoroughly press them together, or they will crumble when you cut into them.
- Sprinkle chocolate chips and Cinnamon Toast Crunch Cereal evenly across the bars. Lightly press in the chips and cereal. Allow to cool for at least 2 hours. Cut into bars, store in air tight container at room temperature.

What a great idea for granola bars! My kids love Cinnamon Toast Crunch (ok... I LOVE Cinnamon Toast Crunch too!)
