I can’t believe it is time to think about back to school already.  It seems like we just started summer break.  After a couple of vacations, lots of trips to the pool, golf and tennis lessons, and tons of playing outside, it is time to start middle school.  A whole new year of firsts, as we transition to a new school.

This year as we start middle school my son gets to play in the band for the first time (taking after his mom and playing the Trombone).  He gets to ride the bus for the first time since kindergarten.  Meet a bunch of new kids, have a locker, change classrooms, and really start growing up.  As much as time goes by so quickly, and I wish he would stop growing up; I am super excited for him to experience this new stage.

As we start this new stage, we are going to need a few shortcuts and tricks to make it easier.  For example, he has to leave the house at 7:15 to get on the bus.  In elementary school he didn’t wake up until 7:15.  So picking out his clothes and having his back pack ready the night before will be a must.  Plus a quick and easy breakfast is going to be key. Cocoa Puffs Cereal Bars are a great idea and something he would eat any day of the week.  I like them because they don’t require any baking, and they can just be ready for him to grab when he is ready.  Perfect for breakfast on the go or even an after school snack.  Add a banana and he is full until lunch time.

My son is excited that in middle school, he will be able to play sports through school.  He is going to be on the cross country team, and has been running with the team for a few weeks already.  The team meets right after school every day, so he needs a quick snack before he heads out for a run.  These Cocoa Puffs cereal bars are a great option. He can take it to school and it can sit in his locker all day.

So as I get myself ready for the fact that my little boy to growing up, I am just going to snack on these cereal bars and hope time slows down just a little.

Total Time 15 minutes

Ingredients

  • 1/3 cup butter
  • 1/3 cup honey
  • ½ cup brown sugar
  • 1/3 cup peanut butter
  • 2 cups quick cooking oats
  • 2 cups Cocoa Puffs, , crushed
  • ¼ cup mini coated candies, (optional)
  • 1 cup Cocoa Puffs

Instructions

  1. Line an 8x8 baking dish with foil or parchment paper.
  2. In a sauce pan combine butter, honey, brown sugar, and peanut butter. Bring to a rolling boil, and boil for 1 minute, stirring constantly.
  3. Remove from heat and stir in oats and crushed Cocoa Puffs. Press into prepared pan.
  4. Top with additional Cocoa Puffs and mini chocolate candies. Gently press into the bars. Let cool completely for 2-3 hours. Slice into bars. Store in an air tight container.

Can anyone suggest a substitute for the peanut butter? I would like to make these for an upcoming party, but I need to be careful in case I have a guest with allergies. Thank you.

Sun butter would work if you are worried about nut butter. Or Cookie Butter/Biscoff spread would work as well.
