Cookie Dough Mini Donuts

Many of you probably know of Jessica from The Novice Chef.  To say she is talented seems like an understatement.  And her new book Mini Donuts: 100 Bite-Sized Donut Recipes just shows you how right I am.  Not only did she come up with all the recipes, but she photographed them too!  Every picture is perfect, and droolworthy, and that is no small task.

I had a really hard time picking which recipe to make.  I thought maybe having my 7 year old look through the book would help narrow it down, but he wasn’t any better!  Between all the chocolate varieties, the various candy versions, fruity ones, and everything in between I was getting hungry!  Finally I went with “The Cookie Monster”, because let’s face it; is cookie dough ever wrong?

This was my first time making donuts, and it will definitely not be my last.  They were so tender, soft, and just plain cute.  Everything is cute in mini form, right?  I am used to cake donuts and are tough and dry, which is why I had previously ruled them out.  But these were anything but, and I can’t wait to make them again!

Cookie Dough Mini Donuts

Fluffy donuts with chocolate ganache and an egg free cookie dough on top.

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Ingredients

Donuts

  • 1 1/3 cups flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 1/2 cup sugar
  • 3/4 cup whole milk (I used skim)
  • 3 Tbls vegetable oil (I used canola)
  • 2 tsp vanilla
  • Cookie Dough
  • 6 Tbls butter , softened
  • 1/3 cup brown sugar
  • 1/3 cup sugar
  • 1/2 tsp vanilla
  • 2 Tbls whole milk (I used skim)
  • 1 cup flour
  • 1/2 tsp salt
  • 1/4 cup mini chocolate chips

Icing

  • 4 Tbls butter
  • 2 Tbls whole milk (I used skim)
  • 1 Tbls light corn syrup
  • 2 oz bittersweet chocolate , chopped (I used unsweetened)
  • 1 cup powdered sugar

Instructions

  1. Preheat oven to 350 degrees.
  2. Sift flour, baking powder, and salt into a small bowl. In a medium bowl, whisk together the egg and sugar. Add milk, oil, and vanilla. Mix until well combined. Add the flour mixture, and mix until there are no lumps. Fill each donut indentation about 3/4 of the way full. Bake for 7-9 minute (an inserted toothpick will come out clean). Remove donuts from the pan, and allow to cool completely on a wire rack.
  3. Prepare the cookie dough. Cream butter, sugar, and brown sugar together. Add milk and the vanilla, mix well. Mix in the flour and salt until everything is combined. Fold in the chocolate chips. Make small balls of dough the size of 1/2 teaspoon. Set aside.
  4. Prepare the icing. In a small saucepan, over medium heat, melt the butter. Add the chocolate, milk and corn syrup. Stir until everything is melted and smooth. Once melted, remove from heat and whisk in the powdered sugar. Immediately dip the top of the donuts in icing and place back on the wire rack. Top the donuts with the balls of cookie dough. Let set for at least 10 minutes before serving.
