How To Make Frankenstein Marshmallow Pops

  1. Beat the powdered sugar, egg whites and lemon juice in an electric mixer until just combined then mix on high speed for 7 minutes or until the Royal Icing is thick and holds its shape.
  2. Divide the mixture into separate bowls. Put 2/3rds in one bowl and 1/3 in another. In the bigger bowl, mix in the green food coloring and black in the other. Slowly add water, 1 teaspoon at a time, until icing is smooth and you can dip marshmallows.
  3. Cover the black icing with plastic wrap, pressing plastic directly onto icing. Set aside until ready to use.
  4. Place a lollipop stick into each marshmallow. Dip marshmallows into green icing, shake off excess, and use a knife to smooth if necessary. Let icing harden completely.
  5. Once green icing is dry, attach the candy eyeballs by placing a small dot of black icing on back of each eyeball, and placing on marshmallow. Hold in place until eye adheres.
  6. Place black icing in a piping bag with a small round tip (#2 or #3). Pipe a mouth, scars, and hair on to each marshmallow pop.  Let harden completely before serving.

Recipe Tips

  • If you don’t have black food coloring you could use the black icing gel they sell at the store. It tends to be a little bit shiny compared to this, but it is very easy to use, and already comes in a little tube that is set up for piping.
  • Let the green icing harden completely before starting with the black decorating. The colors will smear together and not end up with the idea results.
  • There are all sorts of Lollipop trays you can use to help support the marshmallow pops while they set up. If you don’t have one, you can use short cups, just make sure the sticks are longer than the cup.

Storage

Once the icing is completely hardened you can stack these together, they do not need to remain in a tray. Store in an airtight container for 4-5 days.

I think you're pretty creative for a person who's not that good at crafting! Halloween is not that big here in the Netherlands, but I get to look at all the blogs that have so much inspiring treats like yours :p If I was a kid I'd get super excited!
