Funfetti Cheesecake Pie – A creamy cheesecake with lots of fun and festive sprinkles, topped with a mousse and whipped cream.  Great for parties, birthday’s, or just because! 

Sprinkles just make life better. They are pretty much fit for any party. Funfetti desserts are just fun, and everyone loves them.  And it fits perfect for today, because today we are having a virtual party.  Lindsay from Life, Love & Sugar is having a baby!!  Well, 2 babies actually. She is having twin boys!!

My husband is not a chocolate person, so anything like Funfetti Sandwich Cookies or this cheesecake pie are totally up his alley. So when I made this for him, he was over the top thrilled.

Lindsay makes the most over the top and beautiful cakes.  She even has a book called Simply Beautiful Homemade Cakes full of tips, tricks and delicious recipes.  I made her Bailey’s Chocolate Cheesecake for Christmas last year, and everyone loved it.

Lindsay has shared her journey of infertility, IVF treatments and everything along the way over on the Lifestyle portion of Life, Love, & Sugar. If you followed it at all, or can relate to the struggle  at all, you are over joyed for Lindsay and her husband. They are going to be amazing parents to these to baby boys. I am so excited for them!

So a funfetti dessert seemed like the perfect way to celebrate today.  I should have used all blue sprinkles for the occasion, but I didn’t have any. So we have rainbow instead. No one is going to care, when they take a bite of this over the top, creamy, and delicious treat!

Cheesecake pie is kind of a genius idea.  You have your traditional pie crust, that you fill with cheesecake and bake. Then this is topped with a creamy vanilla mousse and lots of sprinkles.  It is great for holidays, parties, dinner get togethers with friends, or just because you feel like baking.

Funfetti cheesecake is definitely more fun than just plain vanilla cheesecake. Sprinkles just bring fun to everything!  You can’t be sad when you are eating something so bright and cheery.

I am excited to be part of Lindsay’s virtual baby shower and wish her all the best on this new chapter. She is going to be the best mom out there, and I can’t wait to see so many pictures of those baby boys.  Check out all the others who joined in the fun today to shower Lindsay with love.

Funfetti Cheesecake Pie

Funfetti Cheesecake Pie - A creamy cheesecake with lots of fun and festive sprinkles, topped with a mousse and whipped cream.  Great for parties, birthday's, or just because! 

Prep Time 30 minutes
Cook Time 30 minutes
Total Time 1 hour

Ingredients

  • 1 9 inch pie crust

For the Cheesecake

  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1/2 tsp vanilla extract
  • 1 egg
  • 2 Tbls rainbow sprinkles

For the Mousse

  • 8 oz cream cheese
  • 1/4 cup sugar
  • 1/2 tsp vanilla extract
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 4 Tble rainbow sprinkles

Instructions

  1. Preheat oven to 350 degrees. 
  2. Place a large rimmed baking sheet on the bottom of the oven.  Fill about halfway with water. 
  3. Roll out pie dough and place in a buttered 9 inch pie plate. Refrigerate until ready to use. 

For the Cheesecake

  1. Beat cream cheese until creamy.  Add in sugar and vanilla and mix until smooth.
  2. Mix in egg and beat until full incorporated.  Do not over mix.  Gently fold in sprinkles.
  3. Pour into pie crust. 
  4. Place in the center of the oven, and bake for 30 minutes.  The cheesecake may puff up slightly, but will flatten as it cools.
  5. Remove from the oven and place on wire rack. Let cool for 1 hour. Then refrigerate for 2-3 hours until completely chilled.

For the Mousse

  1. Using the whisk attachment beat heavy cream and powdered sugar until stiff peaks form.
  2. Beat cream cheese until creamy.  Add in sugar and vanilla and mix until smooth. 
  3. Reserve 1/2 cup of the prepared whipped cream.  Gently fold in the remaining whipped cream into the cream cheese mixture.  Stir in the 2 Tbls sprinkles and spread evenly over the top of the chilled cheesecake. 
  4. Sprinkle with the remaining 2 Tbls of sprinkles. Swirl the reserved whipped cream around the edges of the pie.
