It is time for another edition of Holiday Recipe Club. I am pretty sure you can guess what we are celebrating today ….. Cinco de Mayo! Gotta love the Americans, we will celebrate pretty much any holiday that involves food and drinks. Doesn’t really matter if we are from that country or not. Any excuse to eat, right?
This time our challenge ingredients were dulce de leche, tomatoes, or chorizo. I really wanted to do something with dulce de leche, but we are trying to eat better around here. Which means, I have cut back out on my baking 🙁 Sad, sad day. But a few pounds need to go.
This chicken is full of flavor, and good for you. Who wouldn’t love chicken with lots of lime flavor, and then covered in avocados and tomatoes. Perfect with my Mango Citrus Cooler, or a Skinny Girl Margarita.

Grilled Chicken with an Avocado Tomato Salsa

Chicken marinated in a lime juice, grilled and then topped with an avocado tomato salsa
Ingredients
For the Chicken:
- 4 boneless skinless chicken breasts
- 1 clove garlic, , minced
- 1/3 cup lime juice, (about 3 limes)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 Tbls olive oil
For the Salsa:
- 2 avocados, , pitted and diced
- 2 tomatoes, , diced (I used Roma's)
- 3 Tbls onion, , chopped
- 2 Tbls cilantro, , chopped
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 lime, , juiced
- Lime wedges, (optional)
Instructions
- In a large resealable plastic bag combine all the ingredients for the chicken. Add chicken, and marinate for 20 minutes.
- Preheat grill to medium-high heat. Grill chicken for about 6 minutes a side, or until cooked all the way through. Meanwhile prepare the salsa. Mix all the salsa ingredients together in a bowl. Stir until well combined.
- To serve, place about 1/4 cup of salsa over each chicken breast. Garish with additional lime wedges if desired.

I searched Google for a recipe for chicken that I could make with some leftover guacamole I had…oh my goodness this is SO good!!! The marinade is so easy, fast, and it is so delicious! As simple as it is, it gives the chicken so much flavor. It is so fresh and flavorful. I will be using this recipe over and over again! Thank you!!!
