Grilled Potato Packs

Grilled Potatoes in Foil – these potato packs are such an easy side dish to make on the grill. Mix in bacon, cheese, and green onions make them extra tasty! Plus everything cooks in little foil packs, so clean up is a breeze!

As soon as the weather gets warm, I love cooking as much as I can outside on the grill or smoker. It is just so easy to throw on Classic Hamburgers and have dinner pretty much done. But you can make so much more than just burgers on the grill. Side dishes are so easy to throw on as well, so everything is done at once. Grilled Baked Potatoes are a staple in our house, but sometimes you really want to mix it up.

These grilled potatoes in foil are one of our favorites. Everything cooks in a little foil pack, so clean up takes no time at all. Plus they are loaded with cheese, bacon, and green onions. So they are tasty as well! You can top them with sour cream or salsa when you serve for a quick and easy grilled side dish everyone will love.

One of the best things about making these potatoes in foil is that you can cook them however you want. I like to grill them in the summer, but they are great to make in the oven in the winter. Just put the individual packets on a baking tray, and bake them.

It can be hard to come up with new and good ideas for food while you are camping, but grilled potatoes in foil is one you should definitely add to the list. You can cook them over your campfire, you can add more protein to bulk them up and make them a complete meal!

How To Grill Potatoes In Foil

  1. Start by arranging 4 large pieces of foil on the counter in front of you. Spray each one with non-stick spray.
  2. Then divide the diced potatoes evenly, so that there is about 1 potato in the center of each piece of foil. Sprinkle the potatoes with salt and mix them around a little bit to evenly coat them.
  3. Top each potato pack with and equal amount of cheddar cheese and bacon.
  4. Divide the butter evenly over each of the packs and then fold them up.
  5. Place them on a hot grill and cook for about 35 minutes, until the potatoes are tender.
  6. Remove from the grill, and carefully open them. Sprinkle green onions over them and serve immediately.

How Long To Cook Grilled Potatoes

Grill

To make these potato packs directly on the grill cook for about 30 minutes over high heat, or until the potatoes are tender. The thicker or bigger you cut the potatoes, the longer they take to cook.

Oven

You can throw these little foil packs in the oven if you don’t want to fire up the grill. At 375º F they take about 40 minutes in the oven. These are great to make year round, so even in the winter you can just turn on the oven and make these any night of the week.

Campfire

If you are camping, these are a great thing to make. You can cook them over your campfire for about 35 minutes. Be careful you don’t have them directly over the flame, or the foil will burn.

Variation Ideas

There are so many ways you can mix these up to make them your own!

  • Add Veggies – bell peppers, mushrooms, or onions would be great to throw in with the potatoes.
  • Seasonings – Fresh or dried herbs would be delicious in here. Skip the cheese and bacon and just make grilled herb potatoes. Or toss the potatoes with a packet of ranch dressing seasoning before making this version for even more flavor.
  • Add Meat – there is bacon in the recipe, but add cooked ground beef or taco meat and you could make these a whole meal. Sliced steak or chicken tenderloins are a great addition as well.
  • Toppings – you can go crazy with the toppings. After you remove these from the grill top with sour cream, salsa, jalapenos, hot sauce and more.

Ingredients

  • 4 medium potatoes, diced
  • 1 tsp salt
  • 2 Tbsp butter
  • 1 cup shredded cheddar cheese
  • 2 strips of bacon, cooked and crumbled
  • 2 green onions, thinly sliced

Instructions

  1. Preheat grill to about 400º F.
  2. Place 4 large pieces of foil on the counter. Spray each one with cooking spray.
  3. Divide the potatoes evenly among each foil pack. Sprinkle salt evenly over the potatoes, mixing them around a little bit to coat.assembling potato pack for the grill

  5. Top each with a pat of butter and fold each packet closed.

Notes

Optional Cooking Methods

Bake In Oven - 375º for 40 minutes, until potatoes are tender.

Over A Campfire - cook for about 30 minutes, avoiding the directly flames from the fire.

Can the packs be made in advance and packed in the cooler?

Yes, that should be fine. You would obviously have to reheat them in an oven or something that isn't a microwave. A campfire should work, just make sure it would be indirect heat to slowly heat and not burn the bottom.
