My son is a huge creamy tomato soup fan, so when I was figuring out what soup to make next, I knew this tortellini soup would be a hit. I mean, what is not to love? Creamy soup with fresh tortellini in it, definite comfort food!
I am all about easy when it comes to soup and pretty much every dinner. Some soups are supposed to simmer for hours. I am more about Instant Pot Tortilla Soup. ready in 20 minutes, and I can eat. Or this 10 Minute Baked Potato Soup looks perfect. So this Italian tortellini soup follows my general rules of cooking. Fast and easy.
The key to make this soup so fast and flavorful? It starts with store bought tomato soup. Now, you can definitely go all out and make your own. But if you have a brand you love, use it! I just went with straight up Campbells, because it is my son’s favorite. So I knew the seasonings would work with what I was doing.
With soups I usually go one of 2 ways. I am usually all about the toppings and different flavors and textures to add. Or I am all about the crusty bread you serve along side, to dip in the soup. With this tomato tortellini soup, it is all about the bread. You can serve with a little Parmesan cheese on top, but I want lots of bread on the side to dip in the delicious broth.
This tortellini soup recipe is ready in about 25 minutes. So you can pick up some fresh tortellini from your grocery store at the beginning of the week and have this soup any night of the week. A great way to warm up on a cold night. This Chili Recipe would be great too.
This easy tortellini soup recipe has pesto in with the broth. It gives it all the herbs and flavor you need. So you don’t have to measure out a bunch or herbs or even try to find fresh herbs in the middle of winter. You can use whatever your favorite pesto is, or make your own – that is completely up to you!
I also almost always use skim milk to keep it a little healthier, but if you want your tortellini soup to be thick and creamy, then you can use whole milk or heavy cream. So warm up on a cold night with a comforting bowl of of this tomato tortellini soup or maybe try Beef Stroganoff Soup next time!
- 1 Tbls olive oil
- 2 cloves garlic, , mined
- 1 family size can condensed tomato soup, (I used healthy request)
- 1/4 cup pesto
- 2 cups skim milk
- 2 cups chicken stock
- 1 tsp onion powder
- Salt and pepper to taste
- 9 oz fresh tortellini, (1 package)
- Parmesan Cheese for garnish
- In a large lot heat olive oil over medium heat. Add garlic, and saute for a couple minutes until soft.
- Add tomato soup, pesto, milk, and chicken stock, onion powder, salt and pepper. Bring to a simmer. Simmer for a few minutes.
- Add tortellini, and cook according to the package directions. Mine was for 8-10 minutes.
- Serve topped with Parmesan Cheese
