Lemon Shrimp and Grits – a light and delicious lemony shrimp served over butter-y and cheesy grits. A quick and easy meal you can make in minutes!
Shrimp has to be one of my favorite quick and easy proteins to use. You can flavor it almost any way you want, it cooks in about 5 minutes, and is pretty darn good for you!
This pairs a couple of my favorite things….Lemon Garlic Shrimp and grits! The grits are seasoned with Parmesan cheese, so not super cheesy, but very flavorful and delicious.

Anytime you can get dinner on the table in about 20 minutes I am happy. And this one accomplishes just that. You will love the bright fresh flavors, little prep work, and even on a busy night you can have a comforting meal around the table.
What You’ll Need
- Large Shrimp
- Butter
- Garlic
- Instant Grits
- Water
- Salt & Pepper
- Parmesan Cheese
- Cayenne Pepper
- Lemon
- Parsley
How To Make Lemon Shrimp & Grits
- First thing to do is start your grits. Instant grits cook in no time. Bring water to a boil over high heat. Slowly whisk in the grits, salt and pepper. Reduce heat to low, and cook until thickened (about 5 minutes), stirring occasionally. Add the Parmesan cheese, 1 Tbsp butter, and stir until the butter is melted. Keep it covered so it stays warm while you finish the shrimp.
- Meanwhile, melt the remaining butter in a large skillet over medium high heat. Add shrimp, garlic, and cayenne pepper. Cook until the shrimp are pink, about 3 to 4 minutes.
- Remove the pan from heat, and stir in the 2 Tbsp water, lemon juice, and parsley. Toss well to completely coat the shrimp. Season with a little bit of salt and pepper to taste.
- To serve divide the grits among 4 plates, top with shrimp, and sauce. Sprinkle with a little chopped parsley, and garnish with lemon wedges.
Storage
Shrimp is really best served the day it is made. You can go from tender juicy shrimp to rubbery over cooked shrimp in just minutes. It can be reheated in the microwave if you do have leftovers, just know it won’t be quite the same as it was the first night.

Sorry to hear about your house deliminas – that is certainly no fun. Hopefully it will pass by quickly and you will soon enjoy your new home. Comfort food was a great idea to take your mind off all of the stress. Good luck!!!
I love this combination of shrimp and grits, looks like real comfort food in your photos! Sorry to hear about your frustrating news and hope that you’re in your new home as soon as possible;-)
Omgosh… so sorry to hear about the house news!! I don’t think that’s fair that he’s getting to all the shots of when he can move out. I mean it’s your house and didn’t he sign an agreement of the date he would vacate when you closed? That messes up your time/schedule/movers and own renting situation. What if your landlords want you out because they have someone lined up for your current house? I wouldn’t be so nice Erin… I would definitely fight this guy and get him to get his butt into gear. I hope it all works out…
I am glad you are liking shrimp… I love shrimp!! This dish looks creamy and comforting. I hope it gave you some comfort during this icky situation. I’ll be keeping my fingers crossed for you that it works out in your favor!! Give’em heck!! (Try to) Have a fabulous Memorial Day weekend!! ~ Ramona
Delays that keep on getting more delayed are frustrating especially if it involves a big change for you too. I hope it will be the last date he will give you. I didn’t realize grits translates to semolino. I never had it in this form, like porridge. It sounds great! I’m a big lover of shrimps and porridges so this recipe might work well with me. Thanks for sharing!
Sorry to hear that you are having a problem with the tenant of the property you own. We signed our escrow papers today and are having issues with the sellers who are separating. Every state is different, but you have a contract and rights, too. I hope that by now you have an attorney involved – every state is different, but it sounds like you may have to take a harder line with this guy.
On a lighter note – I love shrimp and grits! There’s a reason why it’s a well-loved Southern dish ๐
That is a real bummer about the house news. On the other hand my hubby would LOVE your grits and shrimp recipe so thanks for sharing!
He’s from SC!
I’m sorry about the house. We’ve been through it too with our home in Florida. We have a renter and things were going good until she stopped paying rent last month. At least you don’t have to go through an eviction process (it’s no fun!) But the shrimp and grits looks really good. I think I’m the opposite as you, I used to love shrimp, but now I find fewer and fewer dishes that I enjoy it in. However, I would love this take on Shrimp and Grits!
So sorry to hear about your house! How frustrating!
This shrimp and grits looks so yummy! A great combo we enjoy often here in the south! ๐
I love this twist on a classic. I’ve had shrimp and grits before, but I’ve never had it with lemon pepper. It looks delicious!
Really great flavors. Pairs so well with grits!
