Loaded Chicken Casserole

With juicy meat, hearty potatoes, and gooey melted cheese, this loaded chicken potato casserole is an easy and hearty comfort meal. It’s packed with broccoli and your favorite spices, and topped with crispy and smoky bacon.

Call me old-fashioned, but I think there’s nothing better than a plate of meat and potatoes. But sometimes instead of having meat with a side of potatoes, I like to combine the two into one meal. And that’s why I love this loaded chicken potato casserole recipe.

This easy and savory loaded chicken casserole is packed full of tender and earthy potatoes and broccoli, chunks of moist chicken, and warm spices. But the best part is the topping, which has crunchy bacon bits and melty cheddar cheese. This is a recipe that you are going to make time and time again!

  • Easy to make. This is a go-to weekday meal for me because of how easy it is. It barely requires any effort to make this filling casserole dinner, and it uses affordable and common household ingredients.
  • Hearty and comforting. A big plate of this loaded chicken and potato casserole is bound to put you in a good mood. It’s so hearty and filling since the two main ingredients are potatoes and meat. But it’s also incredibly comforting, with melted cheese, smoky bacon, and tender broccoli. 
  • Perfect for any occasion. I love this casserole because I can make it for any occasion. It’s an easy weeknight meal, but you can add a few fun toppings and have an exciting weekend dinner. It’s great to bring to potlucks or serve at parties, and it can even make a great side dish at a cookout. Plus, kids love it!

What You’ll Need

You only need a handful of common ingredients to make this cheesy chicken and loaded potato casserole. Be sure to scroll to the recipe card at the end of the page for the exact amounts of each ingredient.

  • Chicken breasts – Make sure to use skinless and boneless breasts. You can also use chicken thighs if you prefer.
  • Potatoes – Russets are best for this recipe, but you can use other potato varieties if you want.
  • Broccoli – I use fresh broccoli when making loaded chicken casserole, but frozen broccoli will also work.
  • Olive oil
  • Salt
  • Pepper – Always use freshly cracked pepper.
  • Paprika
  • Garlic powder
  • Shredded cheddar cheese – Grate your own cheese for best results, but pre-shredded will also work.
  • Bacon – You’ll need to use bacon that is cooked and crumbled. 

How to Make Loaded Chicken Potato Casserole

Here are all the steps for making this super easy and comforting potato and chicken casserole dinner. It barely takes any work!

  • Prep. Preheat your oven to 400F. 
  • Season potatoes. Put the diced potatoes in a mixing bowl with half of the olive oil and season to taste with salt and pepper. Toss to combine.
  • Bake. Pour the potatoes into a 13×9-inch baking dish and spread them out in a single layer. Place the baking dish in the oven for 35 minutes. 
  • Season the chicken. While the potatoes cook, add the chicken and broccoli to the mixing bowl with the rest of the olive oil, the paprika, and the garlic powder. Season to taste with salt and pepper, and toss until combined.
  • Add the meat. Once the potatoes have baked for 35 minutes, remove them from the oven. Pour in the chicken and broccoli mixture, and stir to combine. 
  • Bake. Put the baking dish back in the oven, and bake until the chicken is mostly cooked and the potatoes are fork tender. This should take 15-20 minutes.
  • Top. Remove the baking dish and spread the shredded cheese evenly over the casserole, then sprinkle the bacon over the top. 
  • Finish baking. Put the loaded potato and chicken casserole back in the oven until the cheese melts, about 5 minutes. When the cheese is fully melted, remove the casserole from the oven, and serve hot with optional sour cream and green onions. 

Tips for Success 

Here are a few of my favorite tricks and tips to try when you make this chicken and loaded potato casserole recipe.

  • Make consistent cuts. Try to cut all the pieces of potato to the same size, and all the pieces of chicken to the same size. That ensures that the casserole will cook evenly, and you don’t have any pieces of potato or chicken that are overcooked or undercooked. 
  • Use leftover chicken. If you have leftover chicken in the fridge, you can use it for this recipe. I recommend adding the chicken about 5 minutes later if it’s already cooked so that it doesn’t dry out. 
  • Add more toppings. This is a great recipe for people who like toppings! I usually just add sour cream and green onions, but you can go crazy with this loaded chicken potato casserole. It’s great with chives, parsley, hot sauce, more cheese and bacon, butter, onions, chili flakes, and anything else you might put on a loaded baked potato.

How to Store & Reheat Leftovers

You can keep leftover loaded chicken and potato casserole in the fridge for 4 days, or in the freezer for 6 months. Just make sure to store it in an airtight container. Reheat the casserole in the microwave in 30-second increments, or in a 350F oven for 15 minutes. Make sure to thaw or defrost the frozen casserole before reheating it.

Loaded Chicken Casserole

Ingredients

  • 1 pound boneless skinless chicken breasts, cut into 1-inch pieces
  • 3 large russet potatoes, diced
  • 2 cups broccoli florets
  • 1/4 cup olive oil, divided
  • Salt and pepper to taste
  • 1 Tablespoon paprika
  • 2 teaspoons garlic powder
  • 2 cups cheddar cheese, shredded
  • 6 slices bacon, cooked and crumbled

Instructions

  1. Preheat your oven to 400º F.
  2. In a large bowl, mix together the diced potatoes with 2 Tablespoons of the olive oil and season to taste with salt and pepper.
  3. Place the potatoes in a 13x9-inch baking dish, and spread into a single layer. Bake for 35 minutes.
  4. While the potatoes cook, toss together the diced chicken, broccoli, paprika, garlic powder, and remaining olive oil, and season to taste with salt and pepper.
  5. After the potatoes have baked for 35 minutes, remove the baking dish from the oven. Add the chicken mixture, and mix until everything is well combined. Place back in the oven for 15-20 minutes, until the chicken is mostly cooked and the potatoes are tender.
  6. Remove the casserole from the oven and spread the shredded cheese evenly over the top. Sprinkle the bacon over the cheese, and bake for an additional 5 minutes, or until the cheese is melted.
  7. Remove from the oven and serve with sour cream and green onions if desired.
