Getting back from vacation is hard.  I am pretty sure everyone agrees with that.  You get back from a great trip, and all you want to do is come home and do nothing for 3 days.  But no, you have to do laundry, go grocery shopping, and go back to work.

Really, you should be allowed to have at least a day to recover from vacation before you have to go back to real life.  Especially a Disney vacation.  All the walking and standing in line.  I guess I can be thankful that today I get to sit at a desk and not stand in line all day, right?  But seriously, we had an amazing vacation!  I will definitely be sharing some of the highlights here!

One Pot Pasta {Dinners, Dishes, and Desserts}

You all know I am all about the quick and easy pasta skillet for dinner.  This is pretty much the same thing.  But you can make it in a large stock pot, and use spaghetti noodles!  I cheated and use penne, because that is what I had on hand.  But this concept is genius, you make your sauce and your pasta together in one pot.

Dinner is on the table in less than 30 minutes, and you only have 1 pan to wash. My family would kind of revolt if there wasn’t meat involved, so I added Italian sausage to mine.  You could stir in some spinach at the very end, if you wanted to bump up the health factor.  Definitely top with Parmesan cheese though!

Other one pot pasta recipes I have seen just puts raw onion, garlic and everything in with the water/stock.  I like this one better because you saute the onion and garlic first.  So it isn’t just boiled onions in your pasta.  The noodles are cooking in stock and tomatoes so they are full of flavor and not just bland pasta.

You can switch up your one pot pasta to pretty much anything your family likes.  I used Italian style diced tomatoes, but you could just use tomato sauce, or no tomatoes, and just stir in pesto at the end.  Or if you have tons of fresh tomatoes, use those! I ate the leftover of this one pot pasta with sausage and tomatoes for lunch for 2 days, and was so happy to have it in the fridge!

Ingredients

  • 12 oz Italian sausage
  • 1 cup onion, , finely chopped
  • 4 cloves garlic, , minced
  • 2 tsp dried oregano
  • 1 (14.5 oz) can Italian style diced tomatoes
  • 1 1 /2 cup chicken stock
  • 8 oz penne pasta
  • 2 Tbls fresh basil, , chopped
  • salt and pepper to taste

Instructions

  1. In a large skillet or pot heat olive oil over medium high heat. Add onions and sausage and cook for about 5 minutes. Stir in garlic and cook for 2 more minutes. Add oregano, tomatoes, chicken stock, and pasta to the pan. Bring to a boil. Cover and reduce to a simmer. Cook for 10-12 minutes, until pasta is cooked, stirring occasionally. Stir in fresh basil. Season with salt and pepper.
  2. If desired, top with Parmesan cheese to serve.
