Have you ever had or made a poke cake?  They were popular years ago and they have become popular again! You can make all sorts of different flavors of them.  This Irish Cream Poke Cake is a fun boozy version for the grown ups.  It starts out with a cake that you poke holes in the top of to fill with something like pudding, hot fudge, sweetened condensed milk, jello or something else.  Then topped with whipped cream!  

This Mint Chocolate Poke Cake is perfect if you are a chocolate and mint fan.  So rich and chocolate-y with a mint cream on top. There are just so many ways to mix it up, pretty much just pick your favorite flavor combination and you can make it work!

  pinterest Are you getting ready for summer at your house?  I try not to turn to oven on too much during the summer for baking.  But this Chocolate Poke Cake is going to be the exception.  It is so easy to put together, and topped with a light and creamy pudding/whipped cream mixture, you don’t feel like you are eating a heavy cake. No Bake Kool-Aid Pie is a favorite no bake dessert, but sometimes you just want chocolate. In the mood for a boozy cake?

Chocolate cake with chocolate frosting is probably my favorite cake ever, but this might be a close 2nd. For this Oreo poke cake, you just prepare the cake batter like you normally would.  Then I topped with crushed Oreo’s before baking! I love using Oreo’s as a crust, like this No Bake Mint Chocolate Chip Pie, but as a topping might be even better!

How to Make a Poke Cake

  • The first step is to bake a cake in a 13×9 inch baking pan.  You just use the recipe on the back of a box and bake until it is fully cooked.  Then you let it cool completely. 
  • I use the back of a wooden spoon to make the wholes in the cake, but you can use a knife, tooth picks, whatever you have.  Just poke a bunch of holes over the top of the cake.
  • For this recipe you then pour over the sweetened condensed milk. It oozes into the holes of the cake, and makes the cake so moist and delicious. 
  • Next mix together the pudding and whipped topping to make a fluffy and flavorful whipped cream topping.  Spread it over the top of the cake in a nice and even layer.
  • Then to make it extra yummy you sprinkle the top with a few crushed cookies.  
  • It is best to let the cake set up for awhile in the fridge before serving, just so the whipped cream doesn’t make a huge mess when you slice.

Oreo Pudding Poke Cake is a huge hit with cookies and cream fans, and let’s face it, aren’t we all cookie and cream fans?  If you are looking for a dessert to take to a get together, this cake is perfect. It always disappears in no time.  

You can use whatever your favorite chocolate cake recipe or mix is.  I like a box mix for this, but if you have a homemade cake you like you can definitely use it!  You can also use dark chocolate, chocolate fudge, devil’s food, german chocolate or whatever flavor that you like.  They all pair well with whipped cream and Oreo’s.  Poke Cakes are so easy to make and very forgiving.  So get in the kitchen and start baking!

Oreo poke cake is great to bring to a party, or just have in your fridge for when cravings strike.  It is a big hit with everyone, and only takes minutes to throw together! Even my husband who doesn’t like chocolate ate this cake, so creamy and light and great for any time of year! If you have extra Oreo’s to use up this No Bake Oreo Cheesecake is a must during those hot summer months too!

Ingredients

  • 1 box chocolate cake mix + ingredients on package
  • 2 rows of Oreo cookies, (2/3 of the package)
  • 1 (14 oz) can sweetened condensed milk
  • 1 package Oreo pudding mix
  • 1 1/2 cups milk
  • 1 (8 oz) package Cool Whip

Instructions

  1. Preheat oven to 350 degrees. Spray a 9x13 inch baking dish with non-stick spray, or grease. Set aside.
  2. Prepare cake batter according to the package instructions. Pour into prepared baking dish. Crush 1 row of Oreo cookies, and sprinkle over the cake batter. Bake for 25-30 minutes, until cake is done and a tester comes out clean. Let cool for 30 minutes.
  3. Using the handle of a wooden spoon, poke holes (about every 2 inches), over the cake. Pour sweetened condensed milk over the cake, using a spatula to spread evenly. Let cake cool completely, about 2 hours.
  4. In a large bowl whisk together pudding mix and milk for 2 minutes. Let stand for 3 minutes. Fold in cool whip. Spread over the cake.
  5. Coarsely chop 1 row of Oreo cookies. Sprinkle evenly over the cake.
  6. Place in fridge and let set for at least 1 hour before serving.

Notes

To use homemade whipped cream instead: Whip 1 cup heavy cream until soft peaks. Add 1/4 cup powdered sugar and 1 tsp vanilla. Whip until stiff peaks. Use in place of Cool Whip
