Peanut Butter Cookie Dough Brownies – Fudgy brownies with a layer of egg free peanut butter cookie dough topped with even more chocolate!
 
I am pretty sure that cookie dough might be one of my favorite things.  These Cookie Dough Truffles are like heaven.  You get to have edible cookie dough you don’t have to feel guilty about!  
 
I mean, these Brownie Cupcakes are topped with a cookie dough frosting. It doesn’t get much better than that!  Well, maybe if you have a fudgy chocolate brownie that you top with peanut butter cookie dough.

Chocolate and peanut butter were just meant to be together in my mind.  And these brownies with cookie dough on top are the perfect combination of everything that I love.  Well, everything I love about desserts that is!  The edible cookie dough is exactly what peanut butter cookie dough tastes like, and then it is on top of a super fudgy brownie.  
 
Part of the thing that makes cookie dough not safe to eat raw is the eggs, but also the flour.  Most people don’t second guess eating raw flour, but technically you aren’t supposed to.  So this eggless cookie dough make sure the flour is baked to kill off any bacteria to make it safe to eat!

I have made plenty of chocolate peanut butter brownies in the past.  Peanut Butter Stuffed Brownies are probably the most popular. But these are something special.  If you are the type of person that makes a batch of cookies, just so you can eat the dough, these are for you!  
 
For these cookie dough brownies you can use your favorite Homemade Brownies or you can use a box mix.  You just need enough batter for an 8 inch square baking pan.  Then you mix up the cookie dough, just like you would if you are baking cookies.

Make sure to let the brownies cool completely before spreading on the cookie dough.  If you don’t, it will tear up the brownies and just make a mess. Then pour on the melted chocolate and let it cool.  The peanut butter drizzle on top is completely optional!  It just makes it look pretty, and more peanut butter is never wrong in my book.

Peanut Butter Cookie Dough Brownies

Peanut Butter Cookie Dough Brownies - Fudgy brownies with a layer of egg free peanut butter cookie dough topped with even more chocolate!

Ingredients

Brownies:

  • 2 oz unsweetened chocolate, , melted
  • 1/3 cup canola oil
  • 1 cups sugar
  • 2 eggs
  • 3/4 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Filling:

  • 1/2 cup peanut butter
  • 1/4 cup butter, , softened
  • 1/2 cup brown sugar
  • 2 Tbls milk
  • 1 tsp vanilla
  • 3/4 cup flour
  • 1/4 tsp salt

Glaze:

  • 1 c . semi-sweet chocolate chips Or Any melted Chocolate
  • 2 Tbsp . shortening

Drizzle:

  • 1/2 cup powdered sugar
  • 1 Tbls milk
  • 2 Tbls peanut butter
  • 1/4 tsp vanilla

Instructions

  1. Preheat oven to 350 degrees. Prepare and 8x8 baking pan with non-stick spray or parchment paper. Set aside..
  2. To make the brownies blend the chocolate and the oil together. Mix in the eggs and sugar. Stir in the flour, baking powder and salt until just combined.
  3. Pour batter into pan and bake for about 25 minutes. Allow to cool completely.
  4. Meanwhile, spread flour evenly on a baking sheet. Bake for for 5 minutes. Allow to cool completely.
  5. To make the filling cream together butter and brown sugar. Mix in the peanut butter, vanilla and milk. Stir in flour and salt until well combined.
  6. Spread over cooled brownies. It may be sticky. You can spray a spatula with non stick spray, or slightly dampen your hands to spread out.
  7. Melt Chocolate and pour over the peanut butter layer. Put in fridge for 30 minutes to start to harden.
  8. Stir together the sugar, milk, vanilla and peanut butter. Adjust the level of milk to get your desired consistency. Drizzle over chocolate layer. Store in fridge. Enjoy!!
