I have to say, I am getting pretty tired of the rain.  We almost never get rain in Colorado, we live in a desert.  But this last month, it has rained almost every day.  I think we have gotten more rain in the last month that we usually do in a full year. Everything is green and gorgeous, which is great!  But the kids not being able to go outside, sports practice being cancelled, and just the overall cloudiness all the time is definitely getting old.  I am hoping this means summer is going to be gorgeous…when it actually arrives.

Did you know May is National Salad Month?  Well, today I have a great salad that you can make all summer long.  It is great for quick lunches, picnics, light dinners, or even as a side dish.  It is crispy, sweet, tangy, salty, and filling; all the things I look for in a good salad.  I made this for my friends in cooking club a few weeks ago, and they loved it.  The homemade dressing got rave reviews for not being overly sweet and working perfectly with the Canadian bacon.

Years ago, when we lived in Iowa, we had friends who often had us over for dinner. She often served salad with the meal. I helped put that salad together many times, but never actually got the recipe from her. So this is my take on what I remember of her salad.  It always started with a base of romaine lettuce, topped with apples, pears, and cashews. She used a bottled poppy seed dressing to make it easy. I wanted to turn it into more of a meal so I added Jones Dairy Farm Canadian Bacon and made a quick homemade dressing. Definitely reminds me of the salad my friend used to make.
