Red Velvet M&M Cookies

Red Velvet M&M Cookies – thick and chew cake mix cookies with just a couple ingredients. Use with any cake mix, and add whatever mix-ins you like!

Did you see the fun ice cream cake I posted about yesterday?  I think between the cake, these cookies, and the Red Velvet Puppy Chow from Friday, it is safe to say I have jumped on the Red Velvet band wagon.

Until I started blogging I really didn’t know what red velvet was.  Now, it seems necessary to jump on board when everywhere I turn red velvet is going crazy.  For those of you who are not red velvet fans, I promise this is the last recipe for this year!

For these red velvet cookies I used the leftover cake mix from the puppy chow.  So they kind of had to be made, don’t you think?  I mean, what else are you going to do with half a box of cake mix and half a bag of M&M’s.  A couple years I made my first cake mix cookies, and they were so easy.

The red velvet cake mix cookies come together in just a few minutes, no mixer required, and they bake up thick and chewy.  My husband was on the phone with his parents when I decided to make these.  Before he was even done talking to them, they were out of the oven.  I am all about quick gratification with my desserts! And when you make cookies from a cake mix you get just that!

I am writing the recipe using a full box of cake mix.  But if you have made the puppy chow, like I did, you will have about 1/2 a box of cake mix left.  So I cut the recipe in half, and then just added a little bit of milk to get a dough.

If you don’t have M&M’s, you can easily add chocolate chips instead.  Either way you will get the bursts of chocolate that all cookies need. You can make these cake mix cookies with any flavor cake mix you like. I have used devil’s food and mixed in chocolate chips. Vanilla and mixed in sprinkles.  The possibilities are endless!

Cookies from a cake mix are homemade cookies that anyone can make. You just mix eggs, oil, and the cake mix together to make thick and chewy cookies. You can get fancy with mix-ins like chocolate chips, M&M’s, sprinkles, nuts…you name it. But none of that is required.

So get in the kitchen and make these cookies for your Valentine. Way better than just going to the store to buy chocolates.

Red Velvet M&M Cookies

Thick and chewy red velvet cookies made from a cake mix. Super quick and easy.

Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes

Ingredients

  • 1 box Red Velvet Cake mix
  • 2 eggs
  • 1/2 cup canola oil
  • 1 tsp vanilla
  • 1 cup M&M's

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large bowl add cake mix, eggs, canola oil, and vanilla. Mix until well combined. Fold in M&M's.
  3. Scoop small balls of dough onto a baking sheet. Top with additional M&M's if desired.
  4. Bake for 10 minutes. Remove from oven, and let cool on baking sheet for 5 minutes before removing to a wire rack.
