How do you like your veggies? I love mine roasted. Broccoli, asparagus, brussels sprouts, pretty much any vegetable is good roasted. Normally I just put a little olive oil, salt and pepper on them, and put them in a hot oven for 15 minutes. They come out tender, slightly caramelized, and with so much flavor.
A couple weeks ago I received a package from Star Fine Foods with all sorts of their oils and balsamic vinegars. I was so excited to play around, I didn’t know where to begin. Finally, I decided to start simple. I used their Roasted Garlic Olive Oil over some asparagus. I first tasted the oil on a cracker to see how much flavor it had. It was the perfect balance of roasted garlic to olive oil; it wasn’t over powering at all. It was kind of hard to resist just sitting down with a box of crackers and the bottle of oil.
After roasting the asparagus, the oil gave it just a hit of garlic in the background. A great edition to my normally plain roasted asparagus. I also received a rosemary infused oil, which I can’t wait to use when roasting some potatoes.

- 1 pound asparagus , trimmed
- 1 Tbls Roasted Garlic Olive Oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- Preheat oven to 400 degrees.
- Place asparagus on a baking sheet. Drizzle olive oil over the asparagus. Sprinkle with salt and pepper. Toss to coat.
- Bake for 10-15 minutes, until desired doneness
