One of the best things about Crockpot recipes is just how easy they are, and this is no exception. Yes, you do brown the pork chops on the stovetop before adding them to the skillet. But this gives you so much extra great flavor you traditionally don’t get in the slow cooker. So it is worth the extra step!

What You’ll Need

  • Chicken Broth
  • Sherry Vinegar
  • Flour
  • Carrots
  • Mushrooms
  • Onion
  • Garlic Thyme
  • Oregano
  • Olive Oil
  • Bone-In Pork Chops
  • Salt & Pepper
  • White Wine
  • Heavy Cream

How To Make Slow Cooker Pork Chops

  1. Start by spraying a 6 quart slow cooker with non-stick spray. Add the chicken broth, vinegar, and flour, whisking to combine and dissolve the flour. Stir in carrots, mushrooms, onion, garlic, thyme sprigs, and oregano.
  2. Heat a large skillet over high heat. Add oil, swirling to coat. Season pork chops salt and pepper. Add them to the hot pan and cook for about 2 minutes on each side, until they are nicely browned. Place in slow cooker over the veggies.
  3. Add wine to skillet, and cook for 30 seconds, scrapping up any browned bits in the pan. Pour over pork chops.
  4. Cover and cook on low for 7 hours or until vegetables are tender.
  5. Remove pork chops from slow cooker, and keep warm. Remove and throw away the thyme sprigs. Pour in the heavy cream, and remaining salt and pepper to vegetable mixture in slow cooker. Stir until everything is well combined.
  6. Serve over egg noodles or mashed potatoes.

What Goes With Slow Cooker Pork Chops

Can I Add Vegetables

Yes, you could definitely add more or different vegetables to the crockpot. I added baby carrots and sliced mushrooms to these slow cooker pork chops, and it all cooked together in the crock pot. Depending on how you want to serve it you could add in potatoes, celery, sweet potatoes, parsnips or whatever else your family likes.

These slow cooker pork chops create their own sauce as it cooks. The flour helps thicken and the broth and heavy cream give it the right consistency. If you want more sauce, add a touch more chicken broth and more heavy cream at the end. Save

Ingredients

  • 1 1/2 cups low sodium chicken broth
  • 1 1/2 teaspoon sherry vinegar
  • 3 Tablespoons all-purpose flour
  • 1 cup baby carrots
  • 1 (8 oz) package mushrooms, quartered
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 4 sprigs fresh thyme
  • 1 teaspoon dried oregano
  • 1 Tablespoon olive oil
  • 4 (6-oz.) bone-in center-cut pork chops
  • 3/4 teaspoon salt, divided
  • 3/4 teaspoon black pepper, divided
  • 1/4 cup dry white wine, (or chicken stock)
  • 2 Tablespoons heavy cream
  • 2 tsp fresh thyme leaves

Instructions

  1. Spray a 6 quart slow cooker with non-stick spray. Add chicken broth, vinegar, and flour. Stir in carrots, mushrooms, onion, garlic, thyme sprigs, and oregano.
  2. Heat a large skillet over high heat. Add oil, swirling to coat. Season pork chops with 1/4 tsp of salt and 1/4 tsp pepper. Add to pan, and cook for 2 minutes on each side. Place in slow cooker over the veggies.
  3. Add wine to skillet, and cook for 30 seconds. Scrape up any browned bits in the pan. Pour over pork chops.
  4. Cover and cook on low for 7 hours or until vegetables are tender.
  5. Remove pork chops from slow cooker, and keep warm. Remove and discard thyme sprigs. Add heavy cream, remaining 1/2 tsp salt, and remaining 1/2 tsp pepper to vegetable mixture in slow cooker, stirring to combine.
  6. Serve over egg noodles or mashed potatoes. Garnish with fresh thyme leaves.
