Spicy Thai Noodles with Chicken – a super quick and easy dinner that is on the table in minutes. Full of great Thai flavor with easy to find ingredients!
These Thai Noodles are one of those dinners that comes together in minutes. Really, in the time it takes to boil water and cook pasta, the rest of the meal is ready, and you can eat. Those are my kind of dinners! We love Thai food and other Asian food in our house. Chicken Curry is one of our favorite dishes. Pad Thai is something almost everything thinks of when they think of Thai food. This isn’t Pad Thai, but is has some of the same flavors, and is definitely going to be made again and again here.
And the major bonus…..no crazy ingredients. I used herbs from Gourmet Garden, that I can find at my regular grocery store, to get all the flavor I needed. No special trips to an Asian market, and picking up something I will only use once. Thai seasoning is a combination of many different Thai ingredients, all in one tube!! Because we love Pad Thai, I used Pad Thai noodles to make this. But if you don’t’ have them, regular spaghetti or linguini would work great! I did let the chicken marinate in the fridge for 2 hours before I started cooking. You could start this step in the morning, and cook it as soon as you came home as well.
It really gives the chicken a ton of flavor. I kind of wanted to just eat the chicken on its own when I was making these Spicy Thai Noodles. You can control the heat with how much Sriracha you add, so if you don’t like a lot of heat, cut back. My husband added more at the table because he loves it hot! And Spicy Thai Noodles with Chicken makes for great leftovers, so you can have lunch the next day!

- 1 pound chicken, thinly sliced
- 2 Tbls Gourmet Garden Thai Seasoning, or a mix of ginger, cilantro and lemongrass
- 3 tsp Gourmet Garden Garlic, or 3 cloves garlic minced
- 1 tsp Gourmet Garden Chili Pepper, or 1 tsp jalapeno finely chopped
- 1 14 oz package Pad Thai noodles
- 1 Tbls olive oil
- 1 whole red bell pepper, chopped
- 1 cup shredded carrots
- 4 Tbls brown sugar
- 2/3 cup soy sauce
- 1 Tbls Sriracha
- 4 tsp Gourmet Garden Ginger, or 4 tsp fresh ginger, minced
- 1 whole lime, juiced
- 2 tsp sesame oil
- cilantro, for garnish
- chopped peanuts, for garnish
- In a plastic bag mix together chicken, Thai seasoning, garlic, and chili pepper. Let marinate for at least 2 hours.
- Cook noodles according to the package directions.
- In a large skillet, heat olive oil over medium high heat. Add chicken and cook for 4-5 minutes until browned. Stir in bell pepper, and cook for 2 minutes.
- In a bowl mix together brown sugar, soy sauce, sriracha, ginger, lime juice and sesame oil. Pour over chicken. Bring to a simmer for 2 minutes.
- Once pasta is cooked and drained, add to chicken mixture. Stir in carrots. Once heated through and sauce has thickened slightly top with cilantro and chopped peanuts to serve.
