What a week it has been!  I don’t know how it got so busy, but it did.  My husband and son both have off on Monday for Presidents Day, so that means that I won’t get much work done.  Trying to work ahead, so hopefully we can have a fun day together as a family.  My son wants to go skiing again, but they are notoriously crazy busy on long weekends, so I think that will have to wait.  Maybe a trip up to the mountains to go snow shoeing instead.  The weather here has been in the upper 40’s and 50’s all week, so it should be a gorgeous weekend.

My 10 year old has been obsessed with all thing oranges lately.  Clementines, oranges, tangerines…you name it, he is asking for it.  So I decided to add his new favorite fruit to muffins, and make tangerine raspberry muffins.  Super light and fluffy but packed with tons of flavor.  You get the juicy raspberries and the hint of tangerine in the background.  I never realized how well tangerine and raspberries pair with each other.  This will definitely not be the last time I have them together!

If you have visited this site before, you know I am a huge fan of muffins.  I always have my freezer stocked with them.  It is perfect to grab in the morning before school, throw in a lunch box, or have for an after school snack.  My son gets them ready by himself, so I don’t have to do anything to get him breakfast in the morning.  These tangerine raspberry muffins are no exception.  They freeze perfectly, so you can just pop them in the microwave for 30 seconds in the morning and breakfast is served.  Or enjoy with that mid morning cup of coffee or tea.
