Happy Saturday! I hope you have a fun and relaxing weekend planned! I am so happy that life is finally returning to normal. We had quite the start to the new year and I am ready for it to be over and life schedules to be regular again! My brother had some scary medical stuff happen and ended up with a severe concussion. I was the closest one, so was in the ER with him and taking care of him for a couple days. To say it was stressful and scary is a complete understatement! But he is back to work, healthy, and things are settling down. All of this definitely means a meal plan is in store and how I am going to stay on track and be able to get everything done this week!
Here is the line up for the meal plan is week:
Monday – Soup/Salad/Seafood/Chicken – start the week off with something a little lighter.
Tuesday – Mexican – Tacos, enchiladas and more!
Wednesday – Pasta/Italian – pasta doesn’t have to mean Italian, so look for all sorts of fun dishes.
Thursday – Rice/Asian – recipes from all over the work that are easy to make in your own home.
Friday – Cocktails! Take a night off from cooking and enjoy a fun cocktail to end the week.
Saturday – Anything goes – Mix it up a little bit – breakfast for dinner, casseroles, easy…you name it!
Sunday – Comfort Food/Slow Cooker/Instant Pot – end the week with food your family will love.
