Cabbage Roll Soup

Cabbage Roll Soup - a simple soup that has all the taste of traditional stuffed cabbage rolls that is ready in minutes.  It is hearty, filling, healthy and delicious!

  • 1 Tablespoon olive oil
  • 1 pound lean ground beef
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 4 cups chopped green cabbage
  • 28 oz tomato sauce
  • 1/2 cup uncooked white rice
  • 4 cups low sodium beef broth
  • 1 bay leaf
  • 3 Tablespoon light brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon Italian seasoning


  1. In a stock pot heat oil over medium high heat. Add ground beef and onions. Break up ground beef and cook for 5-6 minutes until beef is cooked and onions are translucent.
  2. Mix in garlic and cook for 1 minute until fragrant.
  3. Add all of the remaining ingredients, stirring to combine.
  4. Bring to a low boil and cook for 20-25 minutes until the rice is cooked. Serve immediately.
