Spicy Sausage Spanish Rice Skillet - turn box rice mix into a full meal! Just one pan, and a couple ingredients and you have a whole meal the family will love!

Ingredients
  • 1 pound sausage (andouille, chorizo, kielbasa)
  • 1/2 cup onion , finely chopped
  • 1 small red bell pepper , chopped
  • 2 Tbls olive oil
  • 1 box Spanish Rice
  • 1 (14.5 oz) can diced tomatoes
  • 2 cups water
Instructions
  1. In a large skillet heat olive oil over medium high heat. Add onion, bell pepper and sausage. Cook until the onions are soft and the sausage is brown.
  2. Add rice, stirring to mix together. Saute until rice is lightly toasted.
  3. Stir in tomatoes, seasoning packet from the rice, and water. Bring to a boil Cover and reduce to a simmer. Cook for 15-20 minutes, until rice is tender.
  4. Serve immediately
