Tamales with Green Chili Sauce

This green chili sauce is great over tamales, on tacos, as an enchilada sauce, or just as dip for tortilla chips.

  • 2 tsp olive oil
  • 1/4 cup onion , diced
  • 2 cloves garlic , chopped
  • 13 oz roasted peppers , peeled and chopped
  • 1 cup chicken stock
  • 1 tsp salt
  • 1/2 tsp cumin
  • 1/4 tsp black pepper
  1. In a large saucepan heat olive oil over medium-low heat. Saute the onions and garlic until soft and translucent. Add the peppers and the chicken stock. Bring to a boil, and simmer for about 15 minutes. Stir in the salt, cumin, and black pepper. Remove from heat, and using an immersion blender (or regular blender) puree until smooth.
