  • Chicken
  • 1 large chicken breast , pounded thin
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Chipotle
  • 1/3 cup mayo (I used light)
  • 1 -2 tsp chipotle in adobo
  • 1/4 tsp salt
  • dash black pepper
  • Southwest Barbeque sauce
  • 1/3 cup smokey barbeque sauce , (recipe here) or store bought
  • 1 Tbls taco seasoning
  • 4 brat buns
  • 4 strips bacon , cooked and crumbled
  • Cheddar Cheese
  1. Preheat oven to 350 degrees.
  2. In a small bowl combine all of the seasonings for the chicken. Sprinkle evenly over both sides of chicken. Bake for 15-20 minutes, or until cooked through. Remove from oven, and thinly slice.
  3. While the chicken is cooking prepare the sauces. For the Chipotle mayo, mix everything together in a small bowl. Set aside. Mix together the barbeque sauce ingredients in a separate bowl, set aside.
  4. Once the chicken is sliced, prepare the sandwiches. Spread the Chipotle Mayo on the top half of the bun. Spread the barbeque sauce on the bottom half of the bun. Place slices of chicken over the barbeque sauce. Sprinkle the crumbled bacon evenly over the chicken, and top with cheese. Place on a baking sheet, and toast for 5-7 minutes or until the cheese is melted.
