Ingredients
  • 1/4 cup buttermilk
  • 1 whole egg beaten
  • 1/2 cup panko breadcrumbs
  • 1/2 cup plain breadcrumbs
  • 2 Tbls taco seasoning
  • 2 small zucchini
Sauce
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • 1/4 cup ranch dressing
Instructions
  1. Preheat oven to 400 degrees.

  2. Slice zucchini into about 1/4 inch slices.

  3. In a bowl combine buttermilk and egg. Place a wire rack over a baking sheet. Spray with non-stick spray. Set aside.

  4. In another bowl mix together panko, breadcrumbs, and taco seasoning.

  5. Dip each slice of zucchini in the egg mixture, then coat in breadcrumbs.

  6. Place on prepared baking sheet. Bake for 20 minutes, until golden brown.

  7. Meanwhile mix together sour cream, salsa, and ranch for the dipping sauce. Store in fridge until ready to serve.

  8. Remove zucchini fritters from the oven. Serve immediately with dipping sauce.
