These Apple Pancakes are the ultimate fall breakfast! Fluffy pancakes are packed with shredded apple and cinnamon, then topped with an easy brown sugar sautéed apple topping. Made from scratch in under 30 minutes!
In a liquid measuring cup whisk together milk, egg and vanilla until the egg is fully incorporated.
1 1/4 cup milk, 1 large egg, 1/2 teaspoon vanilla extract, 2 Tablespoon butter
Add the milk mixture to the flour mixture and stir until just barely combined. Add the melted butter and stir to incorporated.
Fold in the shredded apple until it is evenly distributed. Let the batter rest for 10 minutes.

Preheat a griddle or large skillet to medium high heat. Brush with butter or spray and scoop about 1/3 cup of the batter onto the heated surface.
Let the pancakes cook for 2-3 minutes, until lots of tiny bubbles form on the surface. Flip and cook for an additional 2-3 minutes. When you touch the top it should spring back when it is fully cooked.
Remove and top with butter, cooked apples, or syrup.

To make Sauteed Apples: 2 Tablespoons butter 2 cups diced apple (peel if you want to, not required) 1/4 cup water 1 teaspoon cornstarch 1/4 cup brown sugar 1/4 teaspoon cinnamonMelt butter in saucepan, stir in apples and cook for 5-6 minutes, until soft. Stir water and cornstarch together and pour into the apples. Add the brown sugar and cinnamon. Bring to a boil and cook for 2-3 minutes until the apples are soft, and the sauce is thick and coats the apples.
