This chicken Philly cheesesteak recipe is a new and healthy take on an old classic. It's loaded with chicken, provolone cheese, green peppers, onions, mushrooms, and garlic.
Heat the olive oil in a large skillet, add the chicken, and cook for 7-8 minutes until browned and cooked through. Remove the chicken from the pan and keep warm, or use a separate skillet to cook the vegetables.
1 tablespoon olive oil
Melt the butter in the skillet over medium-high heat. Add the bell pepper, onion, and mushrooms, and cook for 5-6 minutes until they start to soften. Season the mixture with salt and pepper, then add the garlic and cook for about 2 more minutes, until you can smell the garlic and the veggies are cooked.
1 tablespoon butter, 8 ounces mushrooms, 1/2 green bell pepper, 1/2 white or yellow onion, 1 clove garlic
Add the chicken to the vegetables and mix until combined.
Top the skillet with the sliced cheese, and cover for 1-2 minutes until the cheese has melted.
5-6 slices provolone cheese
Scoop the mixture into the rolls and serve.
4 hoagie rolls
Notes
Leftovers can be stored in an airtight container in the fridge for 3 days, though the bread will get soggy after the first day. It is best to store the meat and bread separately.
To make it easier to cut the chicken, try placing the meat in the freezer for 15-30 minutes before slicing.
