Congo Bars
Congo bars are thick and gooey cookie bars loaded with two types of chocolate and walnuts. Make them in one bowl in minutes!

Ingredients

butter
softened

light brown sugar

granulated sugar

whole large eggs

vanilla extract

all-purpose flour

semi-sweet chocolate
1
cup
milk chocolate chips
1
cup
pecans
or walnuts, optional
Instructions
Preheat oven to 350º F. Grease or line a 13x9 inch baking pan with parchment paper.
In a mixer cream together butter and both sugars for about 2 minutes, until light and fluffy.
1 cup butter,
1 ¼ cup light brown sugar,
½ cup granulated sugar
Beat in egg and vanilla until very well incorporated.
2 whole large eggs,
2 teaspoons vanilla extract
Add the flour, and baking soda and mix until it just forms a dough.
3 cups all-purpose flour,
1 teaspoon baking soda
Add both chocolate chips and walnuts and mix until they are evenly incorporated.
1 ½ cups semi-sweet chocolate,
1 cup milk chocolate chips,
1 cup pecans
Spread the batter into an even layer and bake for 30-35 minutes until the edges are set and the bars are lightly golden brown.
