Cornflake Cookies
Cornflake Cookies - a super easy peanut butter and cornflake cookie that you can make in just minutes! They are crispy, chewy, and just like you remember!

Ingredients
- 1 cup granulated sugar
- 1 cup light corn syrup
- 1 cup creamy peanut butter
- 1 teaspoon vanilla extract
- 6 cups cornflakes
Instructions
- In a saucepan over medium heat combine the corn syrup, sugar, and peanut butter. Stir the mixture constantly until it just starts to boil.
- Remove the pan from the heat and stir in the vanilla extract.
- Pour mixture over the cornflakes and mix until everything is evenly coated.
- Using a cookie scoop, scoop cornflake mixture onto a lined baking sheet.
- Let the cookies set up for about 30 minutes before serving.
Notes
If using sprinkles, decorate immediately after scooping onto a baking sheet.
If using chocolate, melt 1/2 cup of chocolate chips, and pour into a sandwich bag. Clip off the corner of the bag and drizzle over cookies or dip cookies into melted chocolate.
