Ingredients

butter
3/4

granulated sugar

brown sugar

crunchy peanut butter

large egg

teaspoon
vanilla extract

all-purpose flour

baking soda
Instructions
Preheat oven to 350º F
Cream together butter, ½ cup sugar, brown sugar, and peanut butter until well combined. Beat in egg and vanilla until fully incorporated.
Add flour and baking soda and mix until it forms a dough.
Scoop about 2 tablespoon size balls of dough, and roll through the remaining ¼ cup of sugar.
You can use a fork to make criss-cross designs to flatten, or just press down gently to flatten.
Bake for 10-11 minutes until the edges are set and golden brown.
Remove and let cool for 5 minutes before removing to a wire rack to cool completely.
