Ingredients

Instructions
Using an electric mixer cream together butter and sugar for about 2 minutes, until it is well combined and light and fluffy.

1 1/4 cup granulated sugar
Add vanilla extract, almond extract and egg. Mix until the egg is fully incorporated.

Pour in flour, cornstarch, baking soda and salt. Mix until everything is just barely incorporated and the flour streaks just disappear.

Add rainbow sprinkles and use a spatula to fold them in until evenly blended.

Use a medium cookie scoop to form about 2 Tablespoon sized balls of dough. Chill for 30 minutes up to 24 hours.
Preheat oven to 375º F.
Place balls of dough on a lined baking tray, spaced about 2 inches apart. Bake for 9-11 minutes until the edges are set and the tops appear dry.
Remove from the oven and let cool on the baking tray for 5-10 minutes before removing to a wire rack to cool completely.
