Italian Stuffed Chicken Breast is rolled up with pesto, tomatoes, and melty cheese, then baked until golden and crispy. An easy family dinner ready in 40 minutes.
Start with thinly sliced chicken breasts. Buy chicken cutlets, or cut a large chicken breast in half lengthwise into 2 pieces. Place the chicken between pieces of plastic wrap and pound until about 1/4 inch thick.
4 (6oz) boneless skinless chicken breasts
Lay the pounded chicken on a cutting board. Spread about 1 Tablespoon of pesto over each piece. Place cheese over the pesto, then spoon about 1 Tablespoon of the canned tomatoes in the center.
1/4 cup pesto, 1 cup Provolone or Mozzarella cheese, 14 oz Italian season diced tomatoes
Roll the chicken tightly and secure with toothpicks. Coat each roll evenly with the breadcrumbs.
1 cup Italian style bread crumbs
Pour the remaining tomatoes into the bottom of a baking dish. Arrange the chicken seam side down over the tomatoes.
Spray the chicken with non-stick spray or drizzle with a little olive oil.
Non-stick spray or olive oil
Bake for 25-35 minutes, until the chicken is cooked through and reaches 165°F.
Use the broiler for the last 2-3 minutes if you want the chicken golden brown.
Remove the toothpicks and serve immediately.
