Lunch lady brownies are moist, fudgy brownies just like the ones served by the lunch ladies at school! They're filled with chocolate flavor and glazed with frosting while they're still warm.
Preheat oven to 350º F. Line a 13x9 inch baking pan with parchment paper and spray with non-stick spray.
In a bowl whisk together melted butter and cocoa powder until completely smooth and no lumps remain. Add in flour and sugar and mix until mostly combined, but there are still white streaks. Add in eggs and vanilla and mix until eggs are just incorporated. The batter will be thick.
1 cup butter, ½ cup unsweetened cocoa powder, 2 cups granulated sugar, 2 cups all-purpose flour, 4 whole large eggs, 1 Tablespoon vanilla extract
Spread into prepared baking pan and bake for 25-30 minutes until a tester comes out clean.
Remove from the oven and let cool for 15 minutes.
Meanwhile prepare the frosting by beating together all of the ingredients until smooth.
4 Tablespoons butter, ¼ cup milk, ¼ cup unsweetened cocoa powder, 3 cups powdered sugar
After 15 minutes, spread the frosting over the warm brownies. Let them cool completely before slicing.
Notes
Use a plastic knife when cutting brownies for clean cuts.
Let the brownies cool before adding the frosting, or the frosting will slide right off! Spreading the frosting over the hot brownies turns it into more of a glaze.
