This one pan lemon chicken orzo is bright, herby, and ready in 35 minutes. Juicy seared chicken and tender orzo cook together in a single skillet, no cream required.
Season chicken breasts on both sides with oregano, thyme, salt and pepper.
4 5-ounce chicken breasts, ½ teaspoon dried oregano, ½ teaspoon dried thyme, Salt & Pepper
Heat a large skillet over medium high heat. Add olive oil. Once hot, add the chicken breasts and cook for 5-6 minutes on each side, until browned and mostly cooked through. Remove and cover with foil to keep warm (and they will continue cooking)

Reduce the heat to medium, add 1 Tablespoon of butter to melt. Add onions and cook for 3-4 minutes until the onions are soft. Add orzo and garlic and cook for 2-3 minutes to lightly toast the orzo.

Stir in chicken broth ½ cup at a time. Let the chicken broth boil and cook down to almost dry before adding the next ½ cup. (same process as risotto). It will take about 10-15 minutes until the orzo is tender and cooked.

Add the remaining 1 Tablespoon of butter, season with salt and pepper, and stir in the lemon juice and fresh parsley.
