Preheat oven to 350º F. Prepare an 8 in baking pan with butter and flour.
Melt the butter and chocolate together in a microwave. Cool slightly.
Stir in the brown sugar, sugar and vanilla until the mixture is nice and smooth.
Beat in the eggs until light and fluffy and fully incorporated
Add the flour, cocoa powder, and salt and stir until just combined, being careful not to over-mix.
Pour the batter into the prepared pan and bake until the brownies are set in the middle, about 30 minutes.
Remove from the oven and let cool completely before slicing.
To Make Frosting
In a bowl mix together all of the ingredients for the frosting until smooth and spreadable. Add more milk or powdered sugar to get the right consistency.
To Assemble
Arrange sliced brownies on a tray or cutting board.
Fill a piping bag fitted with a round tip, or a sturdy ziplock bag with frosting, cutting off the end so you can squeeze out the frosting.
Pipe a round circle, slightly larger that the strawberries onto each brownie.
Place strawberries upside down into the center of each circle.
Pipe a white tip on the top of each strawberry to complete the top of the hat
Notes
You can use store bought brownies, a mix or use your favorite homemade recipe. You can use store bought frosting or leftover vanilla frosting from sugar cookies etc.
