In a small bowl combine all of the seasonings for the chicken. Sprinkle evenly over both sides of chicken. Bake for 15-20 minutes, or until cooked through. Remove from oven, and thinly slice.
1/2 teaspoon chili powder, 1/2 teaspoon cumin, 1/2 teaspoon garlic powder, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1 large chicken breast
While the chicken is cooking prepare the sauces. For the Chipotle mayo, mix everything together in a small bowl. Set aside.
1/3 cup mayo, 1 -2 teaspoon chipotle in adobo, 1/4 teaspoon salt, dash black pepper
To make the Southwest barbecue sauce, mix together the barbeque sauce ingredients in a separate bowl, set aside.
1/3 cup smokey barbeque sauce, 1 Tablespoon taco seasoning
Once the chicken is sliced, prepare the sandwiches. Spread the Chipotle Mayo on the top half of the bun. Spread the barbeque sauce on the bottom half of the bun. Place slices of chicken over the barbeque sauce. Sprinkle the crumbled bacon evenly over the chicken, and top with cheese. Place on a baking sheet, and toast for 5-7 minutes or until the cheese is melted.
