These easy chicken fajita bowls are a great weeknight dinner idea, are perfect for meal prep and come together in no time. Add your favorite toppings and the whole family is happy.
Heat oil in a saucepan over medium high heat. Add the rice, chili powder and cumin and mix well. Toast for 2-3 minutes, stirring frequently.
1 Tablespoon oil, 1 cup white rice, 1/2 teaspoon chili powder, 1/2 teaspoon cumin
Pour in chicken broth and salsa. Mix to combine and bring to a boil. Cover, reduce heat to a simmer and cook for about 20 minutes, until the liquid is absorbed and the rice is tender.

Make Fajita Mixture
Add all of the ingredients for the fajita filling to a bowl, and toss to combine.
1 1/2 pounds chicken breasts, 1 green bell pepper, 1 red bell pepper, 1 onion, 2 Tablespoons olive oil, 2 teaspoons chili powder, 1 1/2 teaspoons cumin, 1 teaspoon paprika, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon salt, 1/4 teaspoon black pepper
Heat a large skillet over medium-high heat, then add the chicken and veggie mixture.
Cook for 10-12 minutes, while stirring frequently, until the meat is cooked and the veggies are soft. Remove from the heat.
Assemble Bowls
Add the rice to the bottom of each bowl. Divide the chicken mixture among the bowls. Add black beans to each bowl.

Can use a packet of store bought Fajita Seasoning in place of the spices called for in the Fajita Mixture section of the recipe.
