These easy chicken fajita bowls are a great weeknight dinner idea, are perfect for meal prep and come together in no time. Add your favorite toppings and the whole family is happy.

I am a sucker for any type of Mexican Recipe. It can be Tex-Mex, authentic Mexican tacos, or just anything even close. And these Fajita Bowls definitely hit the spot.

My Chipotle Chicken Bowl recipe is a popular one that is a homemade version of the restaurant favorite. So today I decided to mix it up and put a fajita twist on it. Chicken Fajitas are really easy to make, and are loaded with flavor.

You really could add Fajita Veggies to your chicken bowl and it would be similar, but I like flavoring the meat with the fajita seasoning as well so it all just works well together.

What You’ll Need

  • Chicken Breasts – you could use chicken thighs as well, you just want to thinly slice so they are a similar size to the peppers and onions.
  • Bell Peppers – any color you like
  • Onion
  • Olive Oil
  • Fajita Seasoning – you can use a store bought mix or Homemade Fajita Seasoning
  • Rice Cilantro Lime Rice or Spanish Rice work great for this.
  • Black Beans
  • Favorite Taco Toppings

How To Make Fajita Bowls

There is a Mexican style rice recipe in the recipe card at the bottom of this post, but it is optional and you really can use whatever type or rice you want.

  • Make Rice. What rice you make is up to you. You can use plain white rice or brown rice or make the Mexican style rice that is listed in the recipe card below.
  • Mix the fajitas. Add the chicken to a bowl with the bell pepper, onion, olive oil, and the fajita seasoning. Toss until the meat is well coated.
  • Cook. Heat a large skillet over medium-high heat, then add the fajita mixture. Cook while stirring frequently until the meat is cooked and the veggies are soft, about 10-12 minutes.
  • Assemble. Add rice to each bowl as a base. Top with black beans, the chicken fajita mixture and whatever toppings you choose.

Recipe Tips & Variations

  • Mix up your protein. You can use steak, chicken, shrimp, just veggies etc. The cooking time will be shorter if you use steak or shrimp, but the method is the same.
  • Make ahead. If you want to make this for meal prep you can cook the rice and the fajita mixture ahead of time. You can make individual bowls and add the toppings when you are ready to serve, or you can store the rice and meat separately and reheat and assemble when ready.
  • Get creative. This is one of those recipes that really is just a method and you can use what you have and like. You can add cheese, top with sour cream, use pinto beans etc.
  • Make it low carb. If you want to go low carb, skip the rice and you could use cauliflower rice or serve over a bed or lettuce.

What Goes On A Fajita Bowl

You really can go crazy and use whatever you like. But are a few of my favorite things to use, including a few Chipotle copycat recipes.

Storage

You can store fajita bowls in an airtight container in the fridge for 3-4 days. Simply reheat in the microwave and you can add fresh toppings to brighten things up once it is warmed through.

Ingredients

Instructions 

To Make Rice

  • Heat oil in a saucepan over medium high heat. Add the rice, chili powder and cumin and mix well. Toast for 2-3 minutes, stirring frequently.
    1 Tablespoon oil, 1 cup white rice, 1/2 teaspoon chili powder, 1/2 teaspoon cumin
  • Pour in chicken broth and salsa. Mix to combine and bring to a boil. Cover, reduce heat to a simmer and cook for about 20 minutes, until the liquid is absorbed and the rice is tender.
    2 cups chicken broth, 1/2 cup salsa

Make Fajita Mixture

  • Add all of the ingredients for the fajita filling to a bowl, and toss to combine.
    1 1/2 pounds chicken breasts, 1 green bell pepper, 1 red bell pepper, 1 onion, 2 Tablespoons olive oil, 2 teaspoons chili powder, 1 1/2 teaspoons cumin, 1 teaspoon paprika, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon salt, 1/4 teaspoon black pepper
  • Heat a large skillet over medium-high heat, then add the chicken and veggie mixture.
  • Cook for 10-12 minutes, while stirring frequently, until the meat is cooked and the veggies are soft. Remove from the heat.

Assemble Bowls

  • Add the rice to the bottom of each bowl. Divide the chicken mixture among the bowls. Add black beans to each bowl.
    15 oz black beans
  • Serve with a slice of lime and your favorite toppings.
    1 lime

Notes

Can use a packet of store bought Fajita Seasoning in place of the spices called for in the Fajita Mixture section of the recipe.
