Instant Pot Spanish Rice – tastes just like the Mexican rice for your local Mexican restaurant. It comes together in just minutes, with pantry staple ingredients you probably have on hand already!

One of my favorite things about Mexican restaurants is the rice that comes with what you order. There is just something about it that makes it hard to beat. And now you can make it at home in just minutes! It is so easy to make, and uses ingredients I am sure you have on hand already.

It goes with just about everything from Instant Pot Chicken Tacos to Sour Cream Enchiladas.

Spanish rice is also known as Mexican Rice, or arroz rojo. It is a classic side dish made with garlic, onions, tomato sauce, and rice.

When you are out for Mexican food it is served along side Refried Beans with just about every meal. It is a simple side dish, but lots of flavor and so good!

Making Spanish Rice in the Instant Pot is my favorite way to cook it. The rice comes out perfectly tender every time. There is no stirring or having to make sure the stove is at the exact right temperature. And the texture is just like you get at a restaurant.

What You’ll Need

  • Long Grain White Rice
  • Olive Oil
  • Butter
  • Chicken Broth
  • Onion
  • Garlic
  • Tomato Sauce
  • Chili Powder
  • Cumin
  • Salt

How To Make Instant Pot Spanish Rice

  1. Start by setting the Instant Pot to sauté and it get hot. Add the olive oil and butter. Once the butter is melted and it is hot add the onions and garlic and cook for 3-4 minutes until the onions are soft.
  2. Meanwhile rinse the rice. Add the rice to a colander and rinse it well. This will help the rice become light and fluffy and make sure you don’t get the burn notice on the Instant Pot.
  3. Once the onions are soft, add the remaining ingredients to the pot and stir until everything is well combined.
  4. Put the lid on, lock it in place, and ensure the vent is closed. Change to High pressure and cook for 3 minutes.
  5. Once 3 minutes is up, let the pressure naturally release until it unlocks.
  6. Remove the lid and then fluff with a fork.

Storage

It is best to serve this Spanish Rice immediately, but once it cools you can cover it or place in an air tight container and place in the fridge for 4-5 days.

To reheat just place in a microwave safe bowl and heat until it is warmed through.

Total: 25 minutes
Servings: 5

Ingredients 

  • 1 Tablespoon olive oil
  • 1 Tablespoon butter
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 8 oz tomato sauce
  • 1 1/2 cups long grain white rice

Instructions 

  • Set Instant Pot to sauté , add the olive oil and butter. Once the butter is melted and it is hot add the onions and garlic and cook for 3-4 minutes until the onions are soft.
