Meximelt Recipe – a copycat recipe of the famous Taco Bell beef Meximelt that used to be available in stores. Super easy to make and even better at home.

You guys love a good copycat recipe as much as I do. The Taco Bell Mexican Pizza recipe on here is one of the most popular recipes of all time. So easy to make and so much better when you make it at home.

Taco Bell used to have Meximelts on the menu, and they were very popular. But like, the Mexican Pizza they removed it from the menu. Recently the Mexican Pizza has returned, but I don’t think they have any plans to bring the Meximelt back. But don’t worry, you can make it at home and it is super easy!

What Is A Meximelt

The Meximelt was a specialty menu item that was a cross between a Fresco Soft Taco and a quesadilla. It was a flour tortilla that had melted cheese, their seasoned ground beef, and then the Fresco salsa on the inside. It was served warm, but not grilled.

Unfortunately in August of 2019 they removed it from their menu. At that time they seemed to pair down a lot of items, and anything that used certain ingredients (like the Fresco salsa) were discontinued.

What You’ll Need

  • Flour Tortillas
  • Ground Beef
  • Taco Seasoning
  • Mexican Cheese Blend
  • Tomatoes
  • Onion
  • Lime Juice
  • Jalapeno
  • Cilantro

How To Make Beef Meximelts

  1. The first step is to make your pico de gallo. To do this all you do is mix together your diced tomatoes, chopped onion, lime juice, cilantro and jalapeno. Once this is mixed together you can cover and set in the fridge until you are ready to use.
  2. Next, make your taco meat. Brown the ground beef in a large skillet, breaking up into small pieces. Add the taco seasoning and water called for on the package. You can use this Homemade Taco Seasoning as well, it works really well.
  3. Warm the flour tortillas in a towel so they don’t crack and are easy to handle.
  4. Fill the tortillas with cheese, meat, and some of the pico de gallo. Roll to close like a small burrito.
  5. Wrap each Meximelt in a damp paper towel and microwave for 20 seconds each.
  6. Remove and serve immediately.

Recipe Tips

To make your Meximelt taste most like the Taco Bell version here are a few tips to follow.

  • When you break your ground beef apart, get it into really small pieces. Taco Bell meat is very small, so use a wooden spoon, spatula or meat chopper to really break apart the meat into fine pieces. This will mimic the texture much closer to the original.
  • Use taco sized flour tortillas. These use to be on the $1 menu at Taco Bell, so they were small and not loaded with a lot of meat. You can definitely make them using a larger tortilla, but if you want it like the original, make them small.
  • Use a fresh salsa or pico de gallo. That is one thing about the Fresco Salsa they used to have. It was actually fresh tomatoes chopped up. It was not like a restaurant style salsa, it was definitely chunky. There is a recipe for homemade pico de gallo below, you can use that or even store bought works great.

What Goes With Meximelts

Just like any Mexican food, there are lots of great side dishes you can make to go with them!

Storage

Got leftovers? No problem, these are super easy to store and reheat. If they are already wrapped, you can put in an airtight container or wrap in plastic wrap. Then just reheat in the microwave for about 45 seconds or until it is hot. They will last for 3-4 days in the fridge.

Freezing – believe it or not these actually freeze really well. After you assemble them, you can wrap them in plastic wrap and foil to make sure they are airtight. Place all your wrapped tortillas in a freezer safe plastic bag and they will last in the freezer for up to 6 months. To reheat, you want to let it thaw in the fridge first, and then just microwave like you would the leftovers.

Taco Bell Meximelts

Ingredients 

  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 6 taco sized flour tortillas
  • 2 cup Mexican shredded cheese blend
  • 3/4 cup Pico de Gallo

Pico de Gallo

  • 1 cup tomato, chopped
  • 2 Tablespoons onion, finely chopped
  • 1 Tablespoons lime juice
  • 1/4 teaspoon salt
  • 1 Tablespoon chopped cilantro
  • 1/2 jalapeno, seeded and chopped

Instructions 

  • To prepare the pico de gallo toss all of the ingredients together in a bowl. Store in fridge until ready to use.
  • Brown the ground beef in a large skillet, breaking up into small pieces. Add the taco seasoning and water called for on the package.
  • Warm the flour tortillas in a towel, for about 20 seconds, or until they are pliable, easy to handle and don't crack.
  • Fill the tortillas with cheese, meat, and some of the pico de gallo. Fold in the sides and roll up like a burrito.
  • Wrap each Meximelt in a damp paper towel and microwave for 20 seconds each.
  • Remove and serve immediately.

  1. My daughter is going to be so excited when I show her this recipe! This was always our favorite item at Taco Bell. We were so sad when it was no longer on the menu. Homemade is always better anyway!
