Chipotle Chicken Bowl

Chipotle Chicken Bowl – a homemade chicken bowl loaded with tender juicy chicken, cilantro lime rice, and all your favorite toppings!

If you’re a fan of Chipotle you are going to love these chicken bowls! I have to say, when I got there it is what I order every single time! There is just something special about their super tender and juicy chipotle chicken that I love.

And making it at home is so easy! Plus, you can use whatever toppings you like. If you have a favorite salsa or sour cream or anything else you can go crazy.

The secret to these chicken bowls is all in how you season the chicken. It is a super simple marinade that gets tons of flavor from a chipotle in adobo peppers. You use 2-3 of the peppers along with some of the sauce that is in the can. It gives the chicken such great flavor, but doesn’t make it too spicy.

What You’ll Need

  • Boneless Skinless Chicken Thighs
  • Chipotle in Adobo
  • Garlic
  • Olive Oil
  • Chili Powder
  • Cumin
  • Lime Juice
  • Salt & Pepper

How To Make Chipotle Chicken Bowls

  1. Finely chop 2 chipotle in adobo peppers and mix with olive oil, lime juice, garlic, cumin, chili powder, salt and pepper.
  2. Toss mixture with chicken thighs, cover and place in the fridge for at least 2 hours.
  3. Grill or cook the chicken in a large skillet for about 6 minutes per side, until it is cooked through and has an internal temperature of 165º F.
  4. While the chicken is marinating and cooking you can get all of your toppings ready, so once the chicken is cooked you can assemble your bowl.

Can You Make Ahead

Yes, you can definitely make the chicken ahead, or just marinate it overnight, if you are short on time. The chicken can sit for up to 24 hours in the marinade, so if you want to prep it the night before you can. Or you can just reheat when you want to make the bowls.

You just want to make sure to only assemble the bowls when you are ready to serve. Store any leftovers separately and reheat the rice, beans etc separately and then assemble.

Ingredients

  • 1 pound boneless chicken thighs
  • 2 chipotle in adobo peppers
  • 2 teaspoons chipotle in adobo sauce
  • 2 cloves garlic, minced
  • 1 Tablespoon olive oil
  • 1 lime, juiced
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon black pepper

Toppings

  • 2 cups rice
  • 1 (15 oz) can black beans
  • 1 cup corn salsa
  • 1/3 cup guacamole
  • 1/2 cup salsa

Instructions

  1. Finely chop 2 chipotle in adobo peppers and mix with chipotle in adobo sauce, olive oil, lime juice, garlic, cumin, chili powder, salt and pepper.
  2. Toss mixture with chicken thighs, cover and place in the fridge for at least 2 hours up to 24.
  3. Grill or cook the chicken in a large skillet over high heat for about 6 minutes per side, until it is cooked through and has an internal temperature of 165º F.
  4. While the chicken is marinating and cooking you can get all of your toppings ready, so once the chicken is cooked you can assemble your bowl.
  5. Assemble the bowls by placing a layer of rice on the bottom, then top with chopped chicken and whatever toppings you enjoy.
