Chipotle Chicken Bowl – a homemade chicken bowl loaded with tender juicy chicken, cilantro lime rice, and all your favorite toppings!
If you’re a fan of Chipotle you are going to love these chicken bowls! It combines all the favorite restaurant style toppings along with super flavorful juicy chicken. You can make it Chipotle night at home any day of the week.

And making it at home is so easy! Plus, you can use whatever toppings you like. If you have a favorite salsa or sour cream or anything else you can go crazy.
The secret to these chicken bowls is all in how you season the chicken. It is a super simple marinade that gets tons of flavor from a chipotle in adobo peppers. You use 2-3 of the peppers along with some of the sauce that is in the can. It gives the chicken such great flavor, but doesn’t make it too spicy.

How To Make Chipotle Chicken Bowls
This recipe is for how to make the chicken, but the links to all of the toppings are listed below, so you can make them however you like!
- Make Marinade. Finely chop 2 chipotle in adobo peppers and mix with olive oil, lime juice, garlic, cumin, chili powder, salt and pepper.
- Marinate. Toss mixture with chicken thighs, cover and place in the fridge for at least 2 hours.
- Grill. Grill or cook the chicken in a large skillet for about 6 minutes per side, until it is cooked through and has an internal temperature of 165º F.
- Assemble Bowls. While the chicken is marinating and cooking you can get all of your toppings ready, so once the chicken is cooked you can assemble your bowl.
What Goes On A Chipotle Chicken Bowl
You really can go crazy and use whatever you like. But are a few of my favorite things to use, including a few Chipotle copycat recipes.
- Cilantro Lime Rice
- Black Beans
- Guacamole
- Roasted Chili Corn Salsa
- Pico de Gallo
- Fajita Veggies
- Cheese
- Sour Cream
- Jalapenos
- Lettuce
Can You Make Ahead
Yes, you can definitely make the chicken ahead, or just marinate it overnight, if you are short on time. The chicken can sit for up to 24 hours in the marinade, so if you want to prep it the night before you can. Or you can just reheat when you want to make the bowls.
You just want to make sure to only assemble the bowls when you are ready to serve. Store any leftovers separately and reheat the rice, beans etc separately and then assemble.
Recipe Variations
- Mix Up Protein. You can really use whatever you like for the protein in your bowls. You could use the Tofo Tacos recipe if you wanted vegetarian. Or Cafe Rio Pork is a sweet and tender pork. Shredded Mexican Beef is another great option.
- Rice. You can use the cilantro lime rice like Chipotle, or you could use Spanish Rice if you wanted something with more flavor. Or you could just use Jasmine Rice as well.
- Wrap It Up. Turn your bowl into a burrito but just filling up your tortilla!
- Toppings. You can add more veggies, add shredded lettuce to turn this into more of a salad bowl. Add your favorite shredded cheese. Lots of ways to make it your own.

This bowl is rich and healthy! It has everything I need in for a complete meal!
Awesome, such a great dinner or lunch!
Love this chicken marinade; my husband has declared it a staple. We’ve made it a few times and it’s easy to make minor adjustments based on what’s on hand. We also will use the chicken in homemade tortillas for taco night – YUM!
